It's 93 degrees here today, so a big pasta salad that's a meal-in-one. Little French Fudge Cakes for dessert, recipe from The Splendid Table's, How to Eat Supper (my all time favorite cookbook.) I think it will convert to GF very easily because there are only 3 T. of flour called for in the recipe. edited to add: I used 3 T. of Wendy Wark flour mix in place of the wheat flour called for in the recipe I posted the hyperlink to. It worked beautifully. I served these with fresh whipped cream, and it was the perfect dessert. _________________ Steph

It was good. I'd get this flavor again. The corn noodles are from Italy. They hold better the first day - 2nd day a little soggy but not distasteful. _________________ Al

Last night was the first attempt at grilling pizza. The good news was that I was able to make 2 full sized pizzas at once. So I had enough pizza for us and our friends who were over for dinner. However, by the time the bottom was done, the top still needed a bit more cooking. A couple of minutes under the broiler for each fixed that, and I have some ideas for how to avoid this the next time...
And tonight, shish-kabobs (marinated in those ras al hanout spices again). I wanted to tweak the marinate recipe, plus, I wanted to see how it turned out with more tender cut of meat. So I used some lamb tenderloins that were on sale . They were amazing! Also had a few other kabobs with mushrooms, peppers and cippolini onions. And finally I used up the rest of the quinoa (since it worked so nicely last time...). This time toasted in a pan, then cooked with chicken broth, shallots, garlic and thyme. Added a splash of half and half at the end. Very yummy and rich tasting -- I think the toasting helped with that one.
I will admit -- I was a little intimidated before using it (oddly enough, the extra step of having to wash the saponnins off concerned me! LOL), but I am now a big fan of it.
Oh, and we were going to grill some cinnamon dusted pineapple for dessert (one of my favorite summertime desserts!), but we were too full! Ah well, we'll save that for Sunday's dinner. |

For the three day weekend, we made all this in advance. People throw what ever meat they want on the grill. The rest is already ready and waiting:
chicken breasts
marinated beef skewers
ribs
hamburgers
hot dogs
potato salad
cole slaw
pasta salad
corn on the cob
baked beans
watermelon

I firmly believe this thread is a priceless resource for newbies who are overwhelmed with the thought that there will never be anything good to eat again.
There are a lot of new people joining here lately, so I thought it would be a good idea to pick this back up where it was when it faded away a month ago.
SO, last night we had orange roughy fillets from Costco, Minute Rice, and frozen veggies. Very quick and easy! _________________ Sandi ~ learning to live in a world obsessed and infested with wheat.

Last night for us was seafood chowdah and Carol Fenster's buttermilk biscuits. Tonight- sandwiches.

Burgers on the grill for me too. The gas grill was out of gas, so it was the Weber kettle's turn. The gas grill is easy but those burgers do taste good on charcoal Also, kale sauteed with onions and garlic and GF blueberry buckle for dessert (local berries are in!).

Monday - hamburger glop, an old family recipe, which is much more delicious that its name would lead you to believe. Sides were TJ's pasta and mixed veggies
Tuesday - Wonderful tilapia filets, just brushed with some olive oil, salt and pepper and dill. They turned out great, and it was so easy! Served with seasoned brown rice and salad.
Wednesday - fried chicken with mashed taters and applesauce.
Tonight I am stumped staring at the freezer trying to figure out what to make. _________________ -Colleen
