I made my first GF bread from scratch over the weekend. It turned out very well and tasted much better than the pre-made stuff in the store. It was a bit gritty, but I will try the super-fine rice flour from the Asian store next time. I might try soaking the rice flour in the liquid like someone suggested.
I have a Sunbeam Stand Mixer (300 watts), and it worked just fine. I also have dough hooks with it. It's a lot cheaper than the Kitchen Aid. (I'd like one of those, but this was a gift.) I've seen these in thrift stores before, so those of you on a limited budget might want to watch for one there.
All in all, I'm happy with my baking. (I guess I'm not a virgin anymore!!!)  _________________ Judy |

I made Walrus Bread. It's a BRM recipe made with Garbanzo/Fava flour, Rice four, and potato flour. I didn't soak the rice flour, but I read some GF baking reviews on AllRecipes about it. They were talking about a different recipe, but it should work the same. _________________ Judy |

Be very careful about buying used mixers! I would NEVER purchase used kitchen utensils, pots, pans, or small appliances because they most likely have been used with gluten. |

Thanks for the "heads up", Isto. I never thought of that. I'm not as sensitive to CC as most of you. I cleaned up my Sunbeam as best I could, and didn't have any problems w/CC. _________________ Judy |
