I came across this recipe on Recipezaar and converted it to GF. I served these as the bread to go with a Chicken Lentil Chili one night. My grandchildren have been begging me ever since then to make these again. They are sooo good!
Corn Waffles with Cilantro-Lime Butter
1 3/4 c. gf flour blend (I use Wendy Wark which has the xanthan gum in it. Add some if your flour blend doesn't have x.gum.)
1/3 c. sugar
2 1/4 tsp. baking powder
3/4 tsp. salt
3 large eggs
1/2 c. buttermilk
1/3 c. oil (I use canola)
1 c. frozen whole kernel corn, thawed and drained
Cilantro Lime Butter
1/2 c. butter, softened
1 T. chopped fresh cilantro
1 tsp. fresh lime juice
First mix all the butter ingredients together (I used my food processor). Mound into a small serving dish and chill. You could also use a small cookie scoop and mold individual servings of the butter.
To make the waffles:
Combine dry ingredients. Whisk eggs, buttermilk, and oil together. Stir in the corn. Whisk the dry ingredients into the wet mixture until well blended. Cook in a greased preheated waffle iron until golden brown. You can usually tell a waffle is done when there is very little steam coming out of the waffle iron. Serve warm with the Cilantro-Lime Butter.
I use my round Belgian waffle maker for these and cut the waffles into quarters for serving. _________________ Steph |
