I like cornbread when it's baked in an iron skillet and served piping hot. Leftover cornbread just isn't my idea of good eats. So, when I had some leftover I decided to make and freeze croutons. Last week I made Caesar salad and put the cornbread crouton on top and they were phenomenal! In fact they were the best croutons I've ever had. They were crispy but they sort of melted in my mouth. No dental work would need to be replaced after eating these.
In the bottom of the bag there were crumbs and I almost threw them away and decided to keep them. having wanted breaded chicken tenders for a while I used the cornbread crumbs to make them. It too was phenomenal! Perfectly crispy and it actually had flavor!
The next time you have leftover cornbread don't let in go moldy on the kitchen counter! |

You can also freeze it for stuffing later on. My absolute favorite stuffing has always been the cornbread stuffing my mom and grandma made from scratch. _________________

Jenn,
I don't think so only because once I bit into a crouton it sort of fell apart in my mouth, or maybe broke down is the better way to put it. I'm afraid used in stuffing they would turn to mush.
Having lived in Alabama I've had that mushy type of cornbread stuffing and if that's what one likes then the it might work. I however want crispy stuffing.
Give it a try and let me know what happens. |

Yeah, if you want it crispy, you have to make the stuffing an altogether different way. There is a way to achieve the cornbread stuffing without it being 'too mushy' (I have had it semi dry on occasion), but it never has that same consistancy as Stove Top _________________

My favorite use for leftover cornbread is to make bread pudding out of it. Back before I was GF, my kids worked for Boston Market and would bring home the leftover cornbread. I grew up not liking anything made of bread or pasta, but that was when we were told that you outgrew celiac, but might develope Sprue later on as an adult! In any event, my husband took the leftover cornbread and made a wonderful bread pudding custard out of it. I have been missing it.

Boston Market cornbread doesn't contain flour? Most of the commercial cornbreads I've come across have it in addition to cornmeal.  _________________ Robin

Boston Market cornbread does indeed contain flour. |

Thanks, Steph. You are correct that it was before I was gluten free. I should have made that more clear, I guess. I believe that the idea will work with anybody's cornbread, however.
You all will have to chalk up the misunderstanding to I just got out of the hospital having spent 2 weeks in intensive care with blood clots in the lungs. I am home now and doing better, but still not up to par yet. I am still trying to catch up with over 1500 messages in my In Box!

Oh Sue, I'm sorry to hear you've been so ill. I can honestly say I know how you feel because I've "been there, done that." I'm glad you are on the mend. It's very scary stuff indeed. It took me a long time to get my strength back, so don't be surprised if it takes a while to get feeling normal again. _________________ Steph |
