Cinnamon Sugar Puffs



Puffs:
2/3 cup soft shortening
1 cup sugar
2 eggs
3 cups sifted flour
3 tsp baking powder
1 tsp salt
1/2 tsp ground nutmeg
2 tsp xanthan gum
1 cup milk

Topping:
1 cup sugar & 1 tsp cinnamon, mixed together in a shallow bowl
1 stick of butter, melted in a separate bowl


1. Thoroughly blend shortening, sugar and eggs.
2. Sift together flour, baking powder, salt, nutmeg and xanthan gum.
3. Alternate between adding the milk and the dry mix to the wet mix. The complete mix will be sticky (like bread dough).
4. Pour the complete mix into a piping bag.
5. Preheat the oven to 350°. Grease a mini muffin tin.
6. Fill each of the tins 2/3 full. Bake for 10-15 minutes.
7. Let the puffs cool for 2-3 minutes.
8. Remove them from the tin. Roll each puff in melted butter, then the cinnamon sugar mix. Makes roughly 54 puffs.

Ostrich notes:
- These things are addictive. I'm not kidding. Especially right out of the oven. omnomnomnom
- Greasing the pan is key, even on a non-stick pan. Otherwise the bottoms will stick to the pan and they'll rip in half and you'll have to eat the defects because all the calories fell out the bottom.
- I used the featherlite mix for this. Not sure how well it'll work with other flour mixes. By the way, in case you ever want to make these NGF the recipe is the same. Just omit the xanthan gum.
- You can try spooning the mix into the pan. But it's really, really sticky. The piping bag (zip-top bag with a corner cut off) helped.

I discovered they're not so good 3-4 days after they're made. They get kinda squishy. I think it's similar to making home-made donuts.
