Al, What are "bun pans"?
Is that roughly like muffin pans?
Perhaps I will just try dropping some in muffin pans tomorrow.

However, there are real hamburger bun pans. Yes, it sounds like a muffin top pan is almost identical from what a few of these links say.

In case any one is wondering what the communion bread was baked in...one was a pie tin, the other one was in a round cake pan.

Peg feels that you must spread out the dough. Otherwise it's not going to get done in the middle, nor will it spread out as it bakes. You can see how that sample of ours turned out - it rose nicely - that dough was spread about 1/2" thick on the bottom of those little tart pans. Spreading out the buns is pretty "painless" Peg said.

OK - OK This will be the last bread picture for today

This was an unplanned picture. We were making BLT's today for lunch, but I decided to turn it into a turkey club. There is bacon in there, you just can't see it. Yeah - stealth bacon... Smile

This bread was frozen, and then brought out of cryogenic suspension by a short trip in the 'wave.

Tip: After 'waving GF bread, make sure you take it off the plate you 'waved it on - or put it on paper towel to 'wave it. There is always moisture on the bottom, if left alone, this will sog up the bread and make it gross. I freeze my bread in wax paper and happened to toss it all in the 'wave. It didn't melt the paper at all, it just got a bit soggy because I didn't deal with the moisture.

Experimental Foccacia Bread

This is Peg's first try using this recipe for this type of bread. It looks really good. I've only had small little pieces of it so far, it tastes as good as it looks!

Edit to add: it needs more garlic and more salt Wink

I made this the other day but without eggs. It came out flatter then the picture of Al's batch but it sure was tasty!

Dumb question- but how do you make the foccacia bread? Do you put all that stuff on top of the dough and then bake as normal?

Peg says yes. Make sure the tomatoes are seeded and dried very well. Same with any of the toppings [in this case it was tomatoes & black olives - maybe some chopped garlic too].

There's also sprinkling of parmesan cheese on top.

Also brush the top with a light coating of EVOO. There's also some Italian seasoning sprinkled on top.

Peg just googled foccacia bread to see all what was in it. She's made this only one other time after the initial experiment. She hasn't gotten anything written down yet for a recipe.

Last night our support group meeting focused on bread, and I brought a batch of flatbread. People couldn't stop raving about how delicious it is. I always swap out half the brown rice flour with sorghum because I love the flavor.

This morning, I am eating a flatbread sandwich with ham and mayo, and the bread tastes just as good today as it did yesterday.
