People keep telling me that I am going to lose weight eating GF. I did lose 5 pounds, but found them again. I am noticing that if its GF it is high in fat or sugar. Most GF food need it to taste like something. I am having a hard time finding GF bread that I can tolerate. I tried the frozen GF pizza. NASTY! I ain't eatin' that one again. I am just now learning to make the GF pancake mix tolerable. How long is this mournin' stage goin' to last? I am in morbid mournin'.

It is true that GF food substitutes can be higher in fat/calories/sugar. Food manufacturers often add these things to improve the taste. I don't buy very many pre-made GF foods, both because of the cost and the fact that I can make a better tasting and healthier version from scratch. Weight gain is common in celiacs as the villi heal and nutrients become better absorbed.

I think a lot of people spend a lot of time in the mourning period, but it will get better as you find options that are to your taste. I was a bit frustrated with many replacement products when I first started out. I think sometimes it is a good idea to go without certain things for a while to allow your taste buds to change. GF bread is not going to taste like gluten bread, especially if you remember what gluten bread tastes like. Smile I myself can't remenber the taste anymore.

You are probably better off avoiding the GF processed foods for now. If you take a break from bread of all kinds, you may find that the GF stuff is more palatable later on.
The mourning lasts as long as you let it! It fades out as you become more comfortable with the diet, to rise up again from time to time if you allow it.

I have been eating alot of those Johnsonville Beddar Cheddar because that I can and they taste sooooo good. I read the fat content this mornin' and just about gave birth to the pig I been eatin'. 18 grams of fat in one of those. yikes!!!

Exercise is wonderful and necessary for weight control. You may want to rethink the "diet" part. If you start to think of healthy eating as a lifestyle choice, you may find it easier to take and keep off the unwanted fat. And I definitely agree to gravitate toward the naturally gluten free foods. Much better in the long run.

Also, have you checked to see if you are craving saturated fat for a reason? My cholesterol has barely made it up to 98 after years of being gluten free. And low cholesterol is, as my doctor points out every single dratted time I have bloodwork, as dangerious as very high cholesterol. Yes, doc you told me that the last 57 times... Rolling Eyes

Hi

Well... I've been mostly GF for 8 years (although have fallen off the wagon recently) but still sometimes miss all those yummy foods that I can no longer eat. I also have a lactose intolerance which makes things a little more tricky. So I'd say that you will never completely stop 'mourning' for those foods like you would never forget someone you knew who passed away. However, the longer you avoid the foods with gluten, the better you feel, the fewer cravings you get and you'll find you don't miss them that much anymore.

I'm back on the diet now and like you need to keep reminding myself that there are lots of other yummy things I can eat.

Good luck!

I think my mourning period stopped when I was able to fully replace my favorite foods with good substitutes. It might take a while but it will happen... even then there maybe moments of fond reminiscing... sort of like remembering just the good parts of a bad relationship. Wink
