ZUCCHINI CHOCOLATE CAKE

Mix together until creamy and set aside:

1 cup brown sugar
1 1/2 cup white sugar
1 stick of butter(softened)
3 eggs
1/2 cup oil

Mix together and set aside:

1/2 cup buttermilk or sour milk
2 tsp. baking soda

Mix together and set aside:
4 Tbs. cocoa
1/2 tsp. allspice
1/2 tsp. salt
1/2 tsp. cinnamon
2 1/2 cups gluten free flour of your choice
(I mixed half rice flour and half gluten free all purpose flour)

Grate or food process 3 cups of zucchini (or carrots)
1 cup of chopped nuts

Chocolate or cream cheese frosting

Alternate flour mixture and milk mixture with the creamed butter mixture
Add zucchini and nuts
Bake at 350 degrees for 45-50 minutes in a greased 9x13 pan
Cool and frost if desired.

Of course!! Very Happy Any cake that has veggies in it is always good for you, the veggies always counteract the sugar & icing. Always. Razz
