If the plastic bowl has scratches, or has those microwaved "boiling around the edges" marks, gluten can hide in there. As far as I know, alcohol is the only substance that will break down gluten and render it harmless to celiac patients (please correct me if I'm wrong, gang).
Cutting boards have the same problem....scratches and cut marks that can shelter that sneaky gluten. To be safe, we tossed all of our plastic cutting boards, plastic cooking utensiles, and even got rid of the last teflon pan in the house (don't like that evil stuff, anyway...but that's for another thread). I even got rid of my *sniff* waffle iron, as I just couldn't be sure it was adequately cleaned. _________________ Deb

Alcohol might denature proteins, but to my knowledge it won't degrade them. Since it's the protein sequence we react to alcohol won't get rid of it. _________________ Lauren

I've never ever heard that one before! Source or proof? |

This may be coming from me. I think it's in a CC thread - I made reference that gluten is not water soluble, but rather alcohol soluble. This is not to say that a celiac can eat gluten then guzzle alcohol to fix the problem - it doesn't work that way...
http://en.wikipedia.org/wiki/Gliadin
| Quote: | | α-/β-gliadins - soluble in low percentage alcohols. |
| Quote: | | Gliadins are known for their role, along with glutenin, in the formation of gluten. It is slightly soluble in ethanol and contains only intramolecule disulfide links. |
http://www.pubmedcentral.nih.gov/articlerender.fcgi?artid=1536826
| Quote: | | The mixed reverse solid phase passive antiglobulin haemadsorption test (MRSPAH) and the enzyme linked immunosorbant assay (ELISA) were found equally sensitive and fitted for the measurement of serum IgG antibodies against alcohol soluble gliadins. |
http://www.answers.com/topic/gliadin
| Quote: | | A protein substance that is obtained from wheat and rye. Its solubility in diluted alcohol distinguishes gliadin from glutenin. |
It's gliadin that is alcohol soluble. I have removed that sentance and updated the PDF.
Sorry for the confusion. _________________ Al
