I live alone and would like to have at least three slices of bread per day. I know GF baked goods don't stay fresh for long and if I get a bread machine I think I would make one pound loaves. Many machines make 2 pound loaves and I want to know if they can also make a one pound loaf. If I get a small machine I don't want to eventually wish I had bought a larger machine. Also, what exactly is the GF cycle? Any suggestions?

One option to consider - Get the larger machine [and thus a larger loaf]. Slice said larger loaf. Package excess bread in 2 slice allotments and place in the freezer. Now you're ready to grab as many "sandwiches" as you need. After a few seconds in the microwave, you've got "fresh" bread!
I freeze all of my bread this way. I never could eat it all before the "furry green monster" gets ahold of it.
We don't have a bread machine, but I suspect the GF cycle has to do with the kneading time [or lack there of]. Since there's no gluten, there's no need to knead. The process of kneading is to "develop" or condition the gluten so gives you decided texture you want.

I'm sitting here eating delicious warm raisin bread (with butter and my own honey) that I made in the el cheapo Breadman (*burp*). Its been frozen for about a month and is still perfect. _________________ Pat |

Yesterday I took a nearly full box of graham crackers and two loaves of Monk's wheat bread (my mother taught me that whole wheat was good for me) to a strip mall and fed the sea gulls. The bread had defrosted and was so nice and SOFT!!! How I envied those birds . Pat, please tell me the model Breadman you use and also the recipe or mix. I will be traveling through NH next week and would like suggestions for a good discount store where I might buy a bread machine. I wouldn't mind not haveing to pay 8% sales tax. The North Conway area is on my way home.

I don't have a bread machine yet, so I don't have any specific suggestions. North Conway does have Kitchen Collections in the Settlers Green outlet mall, and they might have a bread machine or two. You also should see some Target and Wal-Mart stores in Portsmouth that might have them.
I have not been to this restaurant yet, but Rafferty's Restaurant & Pub in North Conway has a gluten-free menu. |

Its the Breadman TR875 2-Pound Breadmaker, Stainless Steel by Breadman. Got it on sale for $68
I'm still using up the cases and cases of Gluten Free Pantry Sandwich bread mix (I won them), the recipe for raisin bread is on the box. This mix does not use the gluten free cycle, BTW.
I've been making cheese bread with the french bread mix (add two cups of finely shredded extra sharp cheddar) and that comes out well, too. _________________ Pat |

I have the Cuisinart bread machine that has a GF cycle. I have posted about it on another thread. I'll see if I can find it and bump it up for you. The machine is exactly like my old Breadman Ultimate, except for the GF cycle, so I suspect they are manufactured by the same company. Most bread machines can make a 1, 1 1/2, and 2 lb. loaf. You just select the size loaf you want. FWIW, I haven't had the greatest luck making 1 lb. GF loaves. The 1-1/2 lb. size seems to work the best. The loaves are too short when I make the 1 lb. size.

I have posted about this restaurant. I was really reluctant to post anything negative because I am so grateful when people are kind enough to make a GF meal possible for us. I have never had a problem with them as far as CC goes, but I'm not real crazy about their food or service. The last time my husband and I went there we said we'd never do it again. We gave them a couple of chances, reasoning that anyone can have one bad day, but after a couple of strike-outs on their part we vote with our feet.
If you are going home through North Conway, I suspect you are planning to take rte 16 to 495? If so, about a half hour from North Conway there is a barbecue place called Yankee Smokehouse. It is at the intersection of Rtes. 16 and 25 in Ossipee, NH. These people serve great food, and they know their stuff when it comes to GF. And, their GF carrot cake is sinfully good. Many of their non-GF customers order it as well, if that tells you anything. _________________ Steph |
