Added tweaks above...

10/4/09 - Peg has been playing again. Yesterday she made a 9 x 9 pan of apple crisp. To do this she doubled the recipe above.

Also tweak she tried was replacing the 1/4 cup of Featherlight mix with:

1/8 cup of Pamela's baking mix
1/8 cup Sweet Rice flour
1 tablespoon (approx) of sorghum flour

If you prefer to leave out the oats, you could use all quinoa flakes. Peg used to use all quinoa flakes before we started using BRM oats. It turned out great then too.

Yes, this topping is crunchy and does not disintegrate.

Peg suggests not to cover or refrigerate - it will get soggy.

I don't keep Pamela's mix though. I'll google to see what the ingredients are. Thanks!

Just to update - It is still crunchy 24+ hrs after baking. Back to eating my crisp...

Good luck!

Also added:

Tip - If you are doing a 9 x 9 glass pan, you might want to cover it with foil for the first half (or so) of baking time. This topping got nicely GBD (Golden, Brown & Delicious) - however it could've baked a bit longer because the apples in the middle were a bit under done.
