I've made several crisps since going gluten free, but I haven't found one that is reminiscent of those NGF crisps. Does anyone have a topping that 1.)doesn't disinigrate and 2.)is crispy when served?
No oat recipes, please.

You'd have to use all quinoa flakes, but Peg just made an apple crisp yesterday. I updated her tweaks: http://forums.glutenfree.com/topic5097.html

I see a trip to WF in my near future. I don't have any quinoa flakes.
Here's another one for you...does Peg ever make cranberry orange bread? If so would she share her recipe?

What?!?! No Q flakes? Seems like a staple in a baking household. We use 'em in meatloaf too!

I bought quinoa flakes a couple of years ago and about a year ago I cleaned out my pantry only to find the inundated with bugs. It wasn't something that I used and haven't needed them since. So, no quinoa flakes here.

It doesn't particularly appeal to me either, but I have a friend who was in Eagle River this weekend and he bought a ridiculous amount of cranberries. He wants (us) to make cranberry orange bread. Maybe a cranberry crisp would be good. |

I haven't tried this yet, but here's my old NGF recipe. I think substituting GF flour work fine.
Cranberry Orange Bread
1 large orange
1 tsp. melted butter
1 C. sugar
2 C. GF Flour
½ tsp. salt
½ tsp. baking soda
1-1/2 tsp. baking powder
1/2 tsp. Xanthan Gum
1 egg
1 C. halved cranberries
1 C. chopped walnuts
Put the grated rind and juice of orange into a large measuring cup. Add melted butter and enough hot water to make ¾ C liquid. Sift tog. sugar, flour, salt, baking soda, and baking powder. Add egg, then orange juice mixture. Add cranberries and walnuts. Pour into three 5-34x2-1/4” greased pans and bake 50 minutes at 325 degrees. (You may have to bake a bit longer.)
Glaze:
Powdered sugar
Orange juice
Vanilla
Mix glaze ingredients. While warm drizzle bread w/glaze.

Thanks for sharing the recipe, Judy. So you don't have to do anything to the cranberries before baking? It is for fresh berries, correct?

TEC- I've always chopped fresh cranberries whenever I made cranberry bread or muffins. I just put them in my food processor and hit pulse a few times, enough to chop them slightly.
My old banana bread recipe converted to GF beautifully (I actually like it better now), so I'm sure the cranberry one will. I've actually been planning to make a cranberry-apricot bread....just haven't got around to it yet. _________________ Steph |

Thanks for the further cranberry explanation. We didn't get to it last night but maybe we'll do so on Thursday.
Steph, my banana bread converted beautifully to GF as well. Rather Grandma converted it beautifully. She still brings me loaves. The pumpkin bread I made also converted wonderfully. Maybe it's a fruit/quickbread thing. |

I had some fresh cranberries also, so I'm making the bread right now. I just have to wait until my Quinoa Bread comes out of the oven and I'll pop them in. I added 1/2 tsp. of Zanthan Gum, since the other quick bread recipes call for it. The batter was way too much for the pan size given, so used 3 mini-loaf pans (5-3/4 x 3-1/4"). I'll let you know the results as soon as they're done.
BTW I've made this recipe many times NGF. It was from one of those old church cookbooks. Those recipes are always winners!! _________________ Judy |

Wahoo! It worked fine. I baked the mini loaves about 50 min. I also cut the walnuts down to 1/2 c. I can't tell the difference bet. these and the ones I used to make.  _________________ Judy |
