I am looking for a snack bar or cookie that is both gluten free and yet has ony 15 carbs per bar.
Our family has both diabetes and celiac and we are trying to follow guidlines for both. I am considering developing my own, I was wondering if anyone knows of anyone already makes one. Does anyone else have this problem? |

I really like KIND Fruit+Nut Bars. I think all of their bars are GF though some have soy in them.
the Macadamia/Apricot Bar (yum!) has 15g carbs - Total Carbohydrates: 15g; Fiber: 5g; Sugars: 12g; Protein: 2g
from their FAQs:
"Are KIND Healthy Snacks gluten-free?
Our products are tested for gluten and meet FDA’s proposed requirement of 20ppm (0.002%) of gluten. Our manufacturing plant is dedicated gluten free and has a strict allergen control program." _________________ son - high ttg - 4/09, pos. biopsy 5/09

I have been known to by one of these when I have a coupon - they are otherwise quite pricey in my area:

I don't know if every type of bar they have is gluten-free but the ones that are are clearly indicated on the package.
I have not had one of the ThinkThins but they are high protein/low carb and some gluten-free:
