Not a regular poster here, but I do read a lot and I'm at my wits end.
I've been GF since January. Sometime this summer realized I was lactose intolerant, now I'm realizing I can't eat corn or nuts, and I'm starting to wonder about eggs. What are we supposed to do? I'm really frustrated, my poor husband deserves a god star for putting up with me. I thought things would get better the longer you were away from Gluten.

You're not alone. I've developed so many sensitivities over the past couple of years it isn't funny...though I'm wondering if I just didn't have them all along, which is why I felt so crummy, and now they just got worse because I went so long before understanding what was going on.

Corn, eggs, tapioca, dairy, wheat, rye, garlic, leeks, chives, peppers, onions, and all derivations...but I manage pretty well. I love to cook, I do best on meats, fruits and some veggies, so I save starch for an occasional potato or wheat free/gluten free treat.

Cravings brand chocolate brownie mix is not only gluten free, but it also is free of corn (except for the tiny bit of xanthan gum), eggs, and dairy, and they're pretty good--no tapioca either.

Janet,
Hang in there with the food allergies. I know it is trying. I have had YEARS of experience with this.

I do not know the whys or hows. just my feelings & experiences. The new allergies you are noticing might be because you are better now & are noticing the connection between food & illness. Or they could be new ones cropping up maybe from a change in diet. These allergies may only be temporary & go away in time. That is the mystery about food allergies they can begin & end anytime.

I avoid all GF bought things like crackers & GF flours as I do not tolerate cross contamination or these flours very well. The exception is Almond Flour & I seem to be fine with that. I also no longer have a problem with corn so I do cornmeal, & corn flour, & corn tortillas. I do not eat canned corn. If I eat fresh corn on the cob (when in season) I try not to eat much of anything else that day & it seems to help, no problems so far with that system.

for someone new to food allergies there are several things to think about. Food combinations, the form of the food, & how frequently you are eating that food. & of course are you also eating something else that is stressing your system?, like for me it would be trying to eat the GF crackers, cookies, & bread replacements etc.

I do not eat beef, I find that I still get a tummy ache from it & I just plain do not think it is good for you.

I will give you an example of two of my bad food combinations. Some people might not believe this but oh well. I cannot eat corn chips & potato chips in the same day not to mention at the same time. They make me sick as a dog with a stomach ache. when I was a kid I would throw up. I also cannot drink cranapple juice. same results. I can drink cranberry juice, eat cranberries, eat apples, drink apple juice, but not at the same time.

I recommend baked sweet potatoes. They taste good, are good for you, & I think they are an "easy" food on the system. Just try to roll along with these food allergies, I think they will get better in time.

LOL...I thought maybe I was overreacting but I too, have combination problems. I do great with beef (as long as it's organic/natural without any hormones, etc.), and I do fine with tomatoes, but put the two together and I get really bad heartburn. I can't eat most fruits raw without getting either bumps on the inside of my mouth or heartburn, but cooked, I have no problem with most of them.

For a while I was developing lots of sensitivities. I did two things: I started taking 1,000 mg of vitamin C a day, which strengthens the immune system, and I rotated all my foods on a four-day plan.

The way I did that was to actually make magnets with the all the foods I eat written on each one (even including stuff like tea, coffee, lemons, spices and seasonings -- truly everything). I bought magnetic sheets in the craft area of Walmart -- they're sticky on one side -- and applied paper on which I had already printed up lists of foods, then cut the little words apart and put them on the fridge. Then I had four areas (one for each day), and a bowl for the ones that weren't being used. On day one, I put up magnets for all the foods I ate. Remember that if you have olives on a magnet, for example, you can have olives and olive oil that day, all day, but then no more for the next three days. If you have dairy one day, then on that one day you can have butter, cheese, cream in your coffee, and whatever else you want. Then, those manets stay where they are, and after you have done days 2, 3, and 4, then you can take day 1 off the fridge on day 5 and re-use those. (Does that make sense?)

It was pretty funny at first -- I'd literally run out of stuff and realized I hadn't planned well! So, I worked harder at it and made sure I didn't have bacon for breakfast, a chicken sandwich for lunch, and some beef for supper -- otherwise, I'd be eating fish for the next few days! lol.

Anyway, long story just a little bit longer, I got rid of the sensitivities! Now I don't do the 4-day plan any longer, but try to be conscious of not eating the same thing every single day of my life -- they say that's one thing that contributes to food sensitivities.

I have gottten more sensitve myself. Soy is killing me. LOL I am so excited though. Hellmann's mayonaise came out with a canola oil mayoniase and it is wonderful. I am so excited. I made my salad dressing with it for thanksgiving. My tartar sauce for fish and I can have it on my sandwiches. I'm in hog heaven here. The label is different but it taste wonderful. Found a wheat free, yeast free bread also. It is so-so. Have to toast it also. Those sensitivities make me nuts. Oh on that note. I can't have peanuts either. Daughter just found out she can't have nuts either. DH for her. Poor thing but, there is always other things. Right?
