I have been running across a lot of recipes lately using mesquite flour. I have never used it, and would be interested to hear about any experiences you may have with it in your baking. I am forever on a quest to try all of the GF flours.

I tried it for chocolate chip cookies and it added a wonderful scent and flavor -- almost cinnamon, but not. I'd love to try it for oatmeal raisin cookies now as well. It's been a while, so I don't completely remember how they were for moisture. But I know I used a relatively small amount -- maybe 15-20% of the flour total, at most?

Ruby Range has a mesquite flour. I emailed them awhile back because they have a few mixes that are insanely low in sodium. I wanted to get a sample for a member in our support group that has congestive heart failure and watches his salt.
