(If you don't know what's going on here, read "I HAVE AN IDEA")

Got out a GF hamburger roll, sliced off some chicken breast (I roasted two whole chickens on the weekend, with sprigs of rosemary under the skin -- delicious!), slathered up the bun with GF mayo, sliced up some fresh carrot sticks, added a pickle, and poured some iced tea. (Might have a Pamela's double chocolate chip cookie for dessert, or an apple with natural peanut butter.)

I am getting ready to chow down on a Nile Spice soup cup (read the labels - several of the varieties are GF), a banana and some fantastic GF chocolate chip cookies I baked out of the GF gourmet book.

I made a GF grilled cheese sandwhich out of shredded cheese and and Kinniknnick white sandwich bread. That bread is great grilled or toasted. I only had time for a quick lunch.

Amy's gluten-free frozen entrees work great when I'm at work. Ethnic Gormet has some frozen meals that are tasty also.
Amy's rice crust pizza can satify that craving if you can eat dairy. Add meats for those inclined.
I like to make grilled cheese sandwiches with Ener-G Foods tapioca bread. Toasts up nice.
Wolfgang Puck has a chicken and wild rice soup that is GF.
Pacific Foods (available in Fred Meyer Nutrition Center around here) has some GF soups. The creamy tomato is great! Better than Campbells!
Leftovers from dinner the night before are all fair gamne for lunch. Cook extra.

I envy her being able to take peanut butter. It is "discouraged" at our school. My CD son probably wouldn't eat it, but it might add some variety for my gluten-eating son.

I am curious.....Why is peanut butter discouraged at school. It is considered a good source of protein.

My daughters fav is ham and avacado on white, pamelas choc. chip cookie, Ener G pretzels,carrot sticks and orange soda. no accounting for the pop but the pretzels are a fav of mine too and I am not Celiac. She is ten and eats like this and is still skinny....but I know she eats healthful and really is healthy now.

Jeanine: Does Miracle Whip use soybean oil. My problem is I am allergic to soy (which is in almost everything it seems) Embarassed so I have no mayo for my sandwiches (which are now reduced to lettuce since I am allergic to yeast) any suggestions? Thanks!

I eat a lot of peanut butter for lunch on crackers, bread, or apples. Other fruits would work too. Also some plain canned chicken with fruit and crackers or bread. I love Fritos and Cape Cod Reduced Fat potato chips. Also LOVE homemade bean dip or white bean dip with Tostitos.

I need more variety so I'm excited about these threads. Praying for many new ideas for safe foods to eat. Blessings to all!

We like to put GF lunch meat and/or cheese on Charras and melt. Also really good is tuna salad or chicken salad on rice cakes. Throw on lettuce and tomato and its awesome! Also, my little ones like peanut butter on rice cakes with raisins on top.

We like to eat leftovers from dinner if there are any.

Oh, we also make lettuce wraps with leftover chicken breast, lunch meat, salad, etc. Really good!

Oh, here's a quick-to-make lunch that I love. It's Tuscan, so if you like "real" Italian food, this is one for you.

It's a bean salad . . . serve immediately after making, at room temperature.

Drain and rinse a can of white beans (any kind you like). Mince up a clove of garlic, and tear up a handful of fresh basil. Chop a tomato, and pit some kalamata olives. Toss all these things with a tablespoon of olive oil, salt, and pepper . . . that's it! Oh, if you like prosciutto, tear up a bit of that as well and toss it in. It makes two good servings.

You can eat it like this for a lunch, or as a side dish for supper, wih a roasted chicken (roast it with rosemary sprigs and whole garlic cloves under the skin, then drizzle the chicken with olive oil and the juice of a lime before roasting). To finish out the meal, on a platter, slice up tomatoes (you can use lots of varieties to make it nicer) and mozzarella cheese, throw a few kalamata olives on the top, a few more basil leaves, and drizzle the whole platter with olive oil, then sprinkle with salt and pepper. Makes a nice company dinner, or just good for Sunday dinner.

Hi Nikki,
Sorry but Kraft Miracle Whip does have soy oil in it. I also try to avoid soy but for some reason it does not seem to bother me in this mayo. Have you checked other mayo's to find something that is GF & no soy? (I know like finding a needle in a haystack)

Can you do mustard?

I had a recipe somewhere around here(but now I cannot find the thing) for a dressing that used olive oil, 1/3 to 1/2 cup I think, a tablespoon of mustard (it thickens it) about 1 tablespoon of vinegar & about 1 tablespoon of Honey, & spices & it seems like you just whipped that all together with a wire whisk.

Boy, you guys really make me HUNGRY! I whip together an egg or two with milk, salt, pepper and, my favorite, Turkish seasoning, though you could use whatever you like. I add enough cornmeal to create a texture of "hush-puppies" and fry it in a fryingpan in oil-- on both sides. I top it with shredded cheese, which melts in and salsa. It's good and FAST.
