Because I don't need to go poor buying Raisinettes. Plus these have no wax or preservatives. The downside is they end up in little clumps...more like turtles. I suppose you could pick each raisin out individually and let it dry. *shudders*

Chocolate Covered Raisins

12oz chocolate (I used Nestle semi sweet chocolate chips)
6 Tbs light corn syrup
1 Tbs milk or water (I used milk)
3 C raisins

1) Mix everything but the raisins together in a medium sized glass bowl.
2) Nuke on high for 30 seconds.
3) Stir the mix.
4) Repeat steps 2 and 3 until the mix is smooth.
5) Dump in the raisins. Mix.
6) Plop spoonfuls of chocolate raisin yummyness on wax or parchment paper. Make the spoonfuls as big or small as you want.
7) Stick them in the fridge for about an hour.

A couple of notes:

- You could melt the mix on a double boiler. But I'm not nearly that patient. Wink
- This recipe is insanely versatile. Want low carb candy? Use no sugar chocolate and blueberries. Something a little more decadent? Use dark chocolate and dried cranberries (Craisins).

My DH loves choc covered raisons.....me too! Is it nessary to have to use Enjoy Life choc chips? I saw those and thought.....*Choc chips have gluten?*....I notice yours is just Nestle......just wondering...Thanks for the recipe!!! Smile

There's no reason to only use Enjoy Life. Nestle as well as other brands of chocolate chips are gluten free.
