Today I had a big mug of decaf coffee with soy creamer, grape juice, and a GF waffle with canola margarine (no dairy in it) and "real" maple syrup! Mmmm!

This a.m., I dined on a banana muffin (made from the minute-muffin mix out of the bette hagman GF gourmet bakes bread book) and a cup of mixed-berry yogurt (GF of course).

You just made me realize that this is the ONE place I don't have to say "GF" after everything I list (I think I had done that in each listing -- duh!). Guess it goes without saying that we're all doing the GF thing here!

I'm not a big breakfast eater. During the week its raisin/pecan rice bread (Food for Life brand) toasted with almond butter. Kinikinnick has a raisin bread that pretty darn good toasted, lots of golden raisins.
On the weekends I may cook up a rice hot cereal and microwave a slice or two of bacon.
Oh and yogurt. Brown Cow maple flavor. yum.
Not horribly exciting. |

My celiac hubby eats basically the same breakfast every morning, although now that we've found some decent GF cereal, he does have that with soy milk and a banana occasionally. His basic breakfast (that I cook each morning) is eggs, bacon, homefries AND (drum roll please!) sandwich bread toasted. He's in love with Kinnickkinnick breads. Coffee, non-dairy creamer, soy chocolate/vanilla mixed "milk" and juice. Yes, I know its high fat, but his cholesterol is great - no problems. _________________ Judy

Breakfast is the best!
This is the one meal we didn't have to change much. About once a week we even have 'breakfast for supper'! Ours often consists of:
scrambled eggs (or omlets)
hash browns (I shred my own taters)
Hormel black label bacon or Hormel little sizzlers or Hormel wranglers.
There are also some good pancake mixes out there. They can also be used for waffles.
And of course any fresh fruit. _________________ Kim --

Most days I have a gluten free cereal. Different ones that I get at the health food stores (though Publix is now carrying 4 different EnviroKidz GF cereals- thank you, Publix!). I have it with vanilla soymilk and apple or grape juice. Delicious to me and filling!
The other day I made a loaf of Flax bread fin my bread machine from Bette Hagman's breadmaking cookbooks and it too is delicious. Made cinnamon toast the other morning and was so excited. Have not been able to have that kind of thing in a long time.

My children ate Cocoa Pebbles. I prefer Maple Buckwheat flakes! With coffee and apple juice. No coffee for the little ones - just me!

I make this one a lot. To start, saute a few cloves of sliced garlic in a tablespoon of olive oil. Add a half dozen pitted and halved kalamata olives. When the garlic is lightly browned, pour 4 egg whites over it, and cook it til it sets. (Don't use the yolks -- that flavor doesn't go well with yolks -- best with just whites). Salt and pepper to taste . . .
It's SO good. That and a cuppa (and sometimes a piece of toast with it), and I'm happy.
If you like to make it heartier, during the saute part add some shredded prosciutto (check the label carefully -- my sister said one brand she saw had something bad in it -- she's also CD), diced up zuchinni and summer squash, and maybe some portabello mushrooms. And for those who eat cheese, add some of that -- I'm sure a good parm or asiago would be great.

I had for breakfast this morning Jimmy Dean sausage mix (sausage, potatoes, oninons, peppers) already cubed and frozen. Add scrambled eggs to it and this morning I took a tapioca sheet (rice paper) and heated it up and wrapped it all up into a burrito. YUM
a cup of coffe with my favorite vanilla soy creamer. Sometimes a piece of toast. Prefer kinninnick but no store close by sells it so I usually make my own from red star recipe. |

well & posting my favorite breakfast.
Sometimes I only have fruit
My favorite breakfast is Lundberg Rice Chips with smuckers all natural peanut butter, apricot jam, & crispy bacon.
My second favorite breakfast is a Mission White Corn tortilla heated in a skillet, take out & put some cheese on it (any kinds milk or goat), minced red onion, minced cilantro, crispy bacon - roll up & enjoy !!!!
Or take the heated corn tortilla & put jam, butter, & bacon. OR peanut butter, jam & canadian bacon, OR dip it in honey & butter mashed together. |

Thought it might be a good idea to resurrect these threads for new members.
Today for breakdast, I had some oeatmel made from GF oats and a small container of "dora the explorer" yogurt. My kids wouldn't eat the yogurt because Dora is "a baby show" so I am stuck with it.

I make a huge batch of brown rice waffles and freeze them in individual servings. In the morning we put what we need in the toaster and have a hot, filling breakfast in minutes. We also freeze muffins individually and warm them in the microwave and eat them with grapefruit halves.
Another favorite is cheese grits, ham and eggs. The leftover grits get put in a loaf pan and chilled and I fry them for lunch or as part of dinner. They are FABULOUS fried!!! |
