Cinnamon toast and a cup of hot cocoa -- that's a favorite late night snack.

I just make toast (toasted is the only way I can handle EnerG breads and rolls -- why do they taste so tolerable toasted, but I have a hard time eating them untoasted?) . . . anyway, spread the toast with margarine, and sprinkle on my own mix of cinnamon sugar (I use 1/4 c. sugar and 2 t. cinnamon, and put it in a shaker).

For the hot cocoa, I use either soy or almond milk, and heat it on the stove with a few squares of Lindt dark chocolate bar (70%, which has no dairy). Whisk it while it heats/melts. And Kraft makes some mini-marshmallows that are GF, so I throw a handful of those on the top of the mug full of cocoa, and it's perfect. I'd almost forget I have celiac!

I promise to be more creative tomorrow.

Professor Lexi, have you tried kinnikinnick breads? They are much, much better than the one you mentioned. Charlie (gf hubby) thinks its like having real bread and he's been without bread for 24 years!

I enjoy fruits, Orville Redenbacher caramel corn cakes (or peanut caramel), and home-mixed trail mix of nuts, seeds, Corn Nuts, dinner mints, and crushed crackers. Any combination of things will work as long as you enjoy the ingredients. Fruit smoothies made with fruit and vanilla soymilk are good. Also made some peanut butter cookies the other day and they were great! Carrots, celery, and other "finger" vegetables with dip would be good too but I haven't tried that yet.

We eat nuts, seeds, dried fruit, rice or corn cakes, trail mix, cheese, gf crackers, tortilla chips, charras for snacks. Fresh veggies out of the garden in summer - baby carrots and green pepper slices in winter. Also grapes and apples.

I get the Kinnikinnick doughnuts and bagels, but we don't have that bread at our store. We do have the Food For Life (I think it's called) bread -- raisin-pecan is my favorite!

Its not easy to find, at least that's been my experience. We have a small health food store that carries the bread, but I've only been able to buy the white sandwich bread once. The dark bread is very good so that's been a help as they seem to have more of it. I'm going to order the donuts and white sandwich from the catalog and put it in my extra freezer.

I like potato chips. When I 1st went GF (and wasn't sure of what to eat), my PC consumption went thru the roof! LOL

I also like Lundberg Rice Chips - Santa Fe BBQ are my favorites.

Corn chips too.

Before I went casein reduced - regular klondike bars a good too. I have a friend that has silent cd - when he 1st went GF he was going thru klondike bars like mad! Very Happy

EnviroKids Crispy Rice bars are good to have around too. These are like Rice Krispy bars. They have different flavors.

I'm a big potato chip fan, too . . . yesterday I went to one of our health food markets here and got potato chips, blue corn tortilla chips, and popcorn (all organic as well). I think it must be because winter is setting in, but I just crave carbs lately. All summer I eat nothing but fruit, veggies, and grilled chicken and fish. Then all winter -- carbs, carbs, carbs. Three days ago I got cinnamon rolls, doughnuts, white bread, hamburger rolls, frozen waffles, polenta, oh, some raisin-pecan bread, and a Thai noodle thingy! Talk about carbs! My daughter was chuckling when she got home, looking at the grocery slip on the counter! LOL

Hi Lexi,

Celiac disease is currently classified into four subphenotypes:

Classical celiac disease - manifests with classical GI symptoms of diarrhea and weight loss from malabsorption. Both serological and biopsy results confirm the diagnosis, and symptoms improve on a gluten free diet.

Celiac disease with atypical symptoms - features a predominance of extraintestinal manifestations with few or no GI symptoms. As with classical celiac disease, diagnosis is made with positive serology and biopsy samples and amelioration from a gluten free diet.

Silent celiac disease - is categorized by individuals being completely asymptomatic, but testing positive with serology and biopsy. Detection is usually from screening of high risk groups, or when biopsies and endoscopies are performed for other reasons.

Latent celiac disease - is associated with positive serological tests, but negative biopsy results. While asymptomatic at the time of diagnosis, in the future symptoms usually develop and/or histological changes are evident upon repeat biopsy.

My favourite snack for this time of year ..

GF Pumpkin Pie.

We sell it at my work .. and wow .. it's amazing.

I'll have to get the brand and update about it.

I love it -- even if I only eat small amounts.

I must know more! lol. I usually make it without the crust -- just mix up the stuff and bake it in a big bowl. Would love the real thing!

Thanks for the info -- I only knew the first two -- I have the second one (atypical).

Now another question -- some people have signature photos at the bottom of their posts -- how does one do that??

Since the admins have not turned on the avatar feature...we resort to doing it this way.

The graphic must live in the internet somewhere. Be it on your webspace you ISP provides or yahoo or msn or whereever.

Once the graphic is on the net you can use the [img] and [/img] commands to show it.

You would insert the location of the graphic between the command: [img]www.yourfilelocation.com/picture.jpg[/img]

Poof!! instant graphics!!

I hear you there. I was just diagnosed a month ago, and that seems to be all I eat now.. potato chips and corn chips.

My poor husband I think is getting sick of tacos for dinner. I've started making this potato soup so I can have something to eat, while he eats 'real' food... This whole diet change so far has not been easy.
