I am a newly diagnosed Celiac. I've been pretty good for the last few weeks, but I'm going totally GF on January 1. Glad to see that there's a support community, that makes the transition easier, I'm sure. Hope you are all enjoying the holidays.

I was diagnosed with Celiac disease about three months ago. At first I thought that there was nothing that I could eat- thank God that has changed for me. There are several websites where you can purchase gluten free foods and cook books that are quite helpful. You can also call the customer service department of your favorite foods you are unsure of to find out if they are gluten free or not. I have discovered that I am now preparing food with fresher/organic ingrediants so I am not missing anything as far as flavor in my meals for my family. Baking has been a challenge for me but I hope by next year I can my bake yummy cookies(gluten free ones) for the holidays. Best of luck with your new gluten free lifestyle. Stick with it even when you are tempted by breads and sweets with gluten and flour in it. You will thank yourself later.

Thanks. I went to the store yesterday and found quite a few things that were Gluten Free and really tasty. It's frustrating though, because so many things are wheat free, but not gluten free...

Anyway, I appreciate the encouragement.

Lynda,

What bread & brownies did you buy?

Most baked goods are better if you make them yourselves. Either with a mix or from scratch. EngerG Rice bread....stay away from. I had 1 piece, the rest went in the trash.

Bread mixes I like are GF Pantry Favorite Sandwich bread & Manna from Anna (the most like wheat bread).

Bob's Red Mill (I believe) has a brownie mix that is pretty good.

the brownie mix was that one i think i made it from a mix
the bread is Food for Life raisen pecan
gross
i just went out to lunch and had sirloin tips, loaded mashed potatoes(garlic,bacon,cheese) and corn
and i have a splittng headache so i wonder what the culprit is
this elimination thing is so much fun:)SmileSmile

[b] Evil or Very Mad Bought five different GF breads Ug - The pecan raisin sounded good - gross.Was ona cruise,asked for GF Bread still ug - Now using Rice Flour,not bad, made Italian Pizzelle's =tuned out great. Tried Soy Flour ?? Corn Starch for gravy Good. Tried Arrowhead Rice and Shine Hot Cereal - Gross. I'm glad I like Rice.
Some things make me break out but I can't determine what.
Why am I gaining weight on this diet. At least 8lbs since Feb.when diagnosed. Rolling Eyes Question

the reason that u r gaining weight is because of the rice it has alot of starch in it. But the rice flour & rice bread crumbs are the best tasting that I have tried yet. I use rice for everything. I'm glad that I love rice & u can do alot with rice. It is all trial & error. I cook alot because I have a big family that likes to eat. I even cook fried chicken using rice flour & seasonings, the secret to that is to use cheese cloth to drain the oil off the chicken & use only corn oil or sunflower oil.

Smile Confused I've been gf, or tried to be, for ONE WHOLE MONTH now!

So far, it's been a bit of touch and go. Trying to work it all out and finding that I've eaten something which wasn't gluten free.

I have a good friend who I see almost every day. Her husband has severe immune deficiency disorder/cf/post polio syndrome/celiac disease etc., etc..He is very unwell at least 75% of the time, even though he is extremely careful with his diet.

We (my hubby & I) have meals with them at least twice a week. I generally eat the same things that her hubby has, because I know that is fairly safe for me. But my friend seems to think it's ok if I have 'just a little' of the glutenous food. Such as her Christmas cake.

I was going to buy a gf one from a health food store, but she said that she doesn't put very much wheat flour in it, and it doesn't hurt her husband. Confused

I am under the impression that I shouldn't eat ANY wheat flour and such, or it will continue to damage my villi. Is that right?

She is a wonderful friend, and I don't want to hurt her feelings, but I want to be well too. This is important to me.

I'd appreciate any advice.

i would try to get her to understand that her husband and yourself can not have any wheat flour......
and id bring my own GF cake ...dont ask just bring it.....
ive been trying to stay GF for 3 weeks now and i got up today feeling really bad
i dont recall eating any gluten last night
but like u all say-its the hidden gluten thats hard to find
so maggie-bring your own food and educate your friend how impritant it is that she has GF food for her husband
friendships like that will not end over gluten.....Smile

Maggie,

It's no wonder why your friend is sick 3/4's of the time!! If he is eating cake with known gluten - God knows they are eating things that have hidden gluten Shocked It doesn't take much for you to feel it.

Maggie, I think you are your friends only hope of feeling better. They need to be educated that "a little" gluten doesnt' cut it. Please keep reading and learning about this. I have left enough links out here to other sites that back up my information that I have been spreading.

I'm glad to hear that you are working on removing all the gluten from your life. It's the only way you're going to feel better. It may also come down to other food intolerances too. It's not uncommon to have multiple intolerances. Only once you remove ALL of them do you feel better. It takes time and quite a learning process.

Al since you have done alot more research than most of us I have a question for you. I bought a bread machine, it has recipes for all kinds of breads. I know to subsitute the flours but is yeast & and or active dry yeast & bread flour ok to use? If ansswer is yes than I have a lot of recipes for everyone Even glazes,spreads,jams,pastas,cakes & breads.
