The Calf's liver is fine, HOWEVER it's usually dredged in flour before it's fried, which is NOT FINE. I've ordered in restaurants requesting it be fried without the flour coating and sometimes that works and sometimes they say "OK" but do their own thing anyway and we suffer for it. If you're doing the cooking it should be fine. Use a GF flour or no flour at all.
It's sticks to the pan a little without the flour but it tastes just as good.

I use Pamela's GF Pancake and waffle mix for my batter for frying and I get nothing but complements on my fried food. I agree though, do it at home not at a resturant. Good luck.

I cook liver all the time. I just put it in a slow cooker with onions & McComicks seasoning & a little water let it steam all day it turns out so tender

How kind of you all to email me on here. My husband cooks it plain with onions and once over rare!! We love it like that. Simple people.
