| What is the latest on celiacs using distilled vinegar? I must admit I do not know how vinegar is made. It must be grained based. Thanks, Jan |

A few years ago Ann Whelan, who publishes "Gluten Free Living" a periodical for celiacs, did a lenghty dissertation on vinegar. Her conclusion was that anything distilled is g-f. She said what Al said, that the gluten molecule is too large to go through the distillation process.
I have followed her principle, avoiding only malt vinegar, because it can be made from barley malt, and because it isn't distilled, and I've never had problems. I only drink wine, no hard liquor, so I don't have any experience in that area, but as to the vinegar, my advice is to not worry.
I recommend "Gluten-Free Living". It is a well researched periodical, and the writers are careful to back up with facts everything they say.
"Living Without" is another periodical I recommend. Peggy Waggener is a celiac, she's the publisher, I believe. All the recipes in this magazine are g-f. They do write articles pertaining to other allergies, but always have alot of info on celiac disease. We need all the information we can get, so this is one place to look for support. |
