I'm not a baker, so I don't know a great deal about yeasts. There are GF yeasts. Here is a list: Red Starr; Fleishmanns; SAF; Clabber Girl; Featherweight; Hearth Club; KC; Rumford; Watkins. I got this from the Delphi board

I'm not sure what you mean about "bread flour". ANY flour that is made from wheat, barley, rye or oats is not safe to use.

I ran across this site again. Since you are working with a bread machine it might interest you. It gives you some hints & tips. http://www.glutenfree.com/doc.htm.

We used to use a bread machine. Then we found out I like the texture of the bread when it was mixed by hand (or heavyduty mixer) and baked in the oven. The machines are easier thats for sure. The bread machine we were using WAS programable, but I didn't mess with it. As you will find in the link above - gluten free dough does not need the same processing as glutened dough. So, that may have had an affect on my bread.

Thanks everyone for confirming that there is no room for ANY gluten in the diet.

Aklap, I'm sure I do have other food intolerences, just have to work them out.

As for my friend, I'll just have to stand firm on it, and take my own food if necessary when we visit them. She is a very kind person, don't get me wrong. I just don't think she has understood the enormity of celiac disease and how it can vertually poison us.
I have seen her husband so ill, he has fallen over trying to walk to the toilet from where he was lying down in the living room. It's horrible for him, and his wife. He's been like this for over 30 years.

My friends have been extreemly supportative once I explained to them that I cannot have ANY wheat/gluten. I was doing the "mostly" WH/GF diet for a while and still felt bad most of the time. Once I made the commitment to myself to really follow my diet, I have felt better than I have in years! I have one friend who's Italian and is an amazing cook. He has offered to make me my own lasagna/pasta if I bring him my GF stuff ahead of time when we do Italian. Another friend has learned what I can and cannot eat, so when she is buying me treats, she reads the labels and makes sure I can have things before giving them to me. It was really hard for me to be firm at first, but now that all of my friends/family see the difference that staying gluten free has made, they are all behind me 100%! (My mom even made GF stuff for Christmas so I wouldn't have to make my own food. No one even noticed the difference....)
Good luck with your friend. I am sure once she sees the difference in you after being GF for a month or so, she'll be on board. (Maybe with her husband's diet as well...)

Hi luvscowznh. I'm beginning to get braver, and more forthright.
I've always been a fairly passive person, and not one to say much, or stand up for myself.
So, having a course (my health) is heping me to do it I guess. Smile

My friend is starting to realise I'm getting more 'gutsy' for want of a better word. Now SHE is making sure I have the right things to eat. She checks labels. What a difference a bit of standing up for myself has done.

As I say, she is a real sweetie, and it's just been a matter of her realising my (and her husband's) need to beTOTALLY gluten free.

One of the girls at my church told me today that my eyes are clearer than they were a week ago. So, that's good to hear.
I'm heading in the right direction.

It's strange. I feel like I'm more awake some days. Like a fog has lifted. Other days I feel like I've always felt, but sometimes the difference is really dramatic. I'm still getting some hidden gluten, I'm sure, but I'm really really trying. I'm also really excited, because Fritos are GF, and so is Wendy's chili, and I have soy cheese. GF frito pie, baby!

geesh ive been GF for 3 weeks and i dont feel as the fog has lifted yet....hmmmm
still nauseaus and headache.......hmmmmmmm

ok im gonna make my first batch of GF choc chip cookies:)Smile

It's interesting to notice that others of us have that fog in the brain too. I've been like that for as long as I can remember. Mad
I've been d/xed with chronic fatigue, amongst other things, and just thought that not being able to think in more depth than to state my name correctly, or remember two items in sequence, was just chronic fatigue and that I have to live with it.

Idea Maybe the fog will lift after some time for us all, once we get all the poison out of our systems and know what to eat and suppliment ourselves with.

It sure beats speaking as if I've had a few too many ales, and appearing as if I'm not capible of holding a conversation..which I really can't do at the moment.

BUT IT WILL IMPROVE IN TIME FOR ALL OF US Exclamation Exclamation
Thank goodness for that.

I've found that my bread I bake is better than any that I buy. And I've found quite a few sites with good recipes for other things too. There is a good recipe for brownies and other desserts at this site.

I had an endoscopy last week. I spoke to the Dr. today and he said my biopsies were abnormal and inflamed. He is pretty sure it is celiac. But wants me to get blood work done, so tomorrow I will do that.
I just turned 50 a week ago!!
It all makes sense now. I have been constipated as long as I can remember . This past year it has been the worse. Pain waking me up at nite, I can go for days without going. It is awful!!
The scope also revealed I have a hiatus hernia and reflux and have started Nexum and that has helped.GF, is really going to be hard. I was always told I had IBS, I even got this book on it but it hasn't helped with the constipation.
I don't know where to start, but finding this site will be helpful!!

Hi Robin,

Sorry to hear that you have to deal with this. All to often this is misdiagnosed as many other things. It's sad really. But you know what?? It's really not that bad...really. It does take some getting used to, but once you start feeling better...you will know that it is worth it.

My suggestion for you is to read, read & read some more. Learn as much as you can about this. That is the only way you will beat it! There is lots of info here...and lots of links to other helpful sites. So, take your shoes off, roll up your sleaves and prepare to start your knowledge quest! You won't regret it!!!

Don't be afraid to ask questions, that what these places are all about!!

i am 49 and just diagnoses as gluten intolernt
i had the scope 5 yrs ago and the doctor did say i had an inflammed stomach and that was it
no meds no additional testing
if he had gone furthur then i prob wouldnt be as bad now
i had the opposite
i had diahrehha every day
since going gluten free it has stopped alot
my doctor -a woman- also told me yesterday=becuase i didnt have the disease i could continue on m,y other meds that may have trace amounts of gluten
i had no glutem today and had a diahrehha attack so.......

I felt foggy everyday before I started my total GF diet. I thought I was just getting dumber as I got older. Then I stopped eating gluten and was very watchful of what ingredients are in things. And BAM!! The fog lifted. (Until I got hit with the cold-like flu that's going around....)

It does take a little while to feel better. When I finally did I wondered why I had waited so long and let myself feel so bad for so long. Not having cookies and sweets doesn't bother me as much now. My homeopathic NP gave me some supplements to help with the cravings. It has made a huge difference. Smile
