Last night's dinner was very colorful and delicious! Wish I had leftovers but I don't because we ATE THE WHOLE THING!!

Rice:
2 c vegetable broth (GF)
1 c brown rice
salt & pepper to taste
1/2 stick margarine
1/2-1 t tumeric (isn't that the yellow indian spice? my sis gave me some to try but I think that's the name of it.)
Cook according to package directions.

Fish:
Put fish in a greased pan.
Sprinkle w/ salt & pepper.
Sautee garlic and onion.
Sprinkle on top of fish. (I had one of those bags from Walmart of frozen whitefish)
Slice or dice tomatoes. I was gonna use plum toms but only had regular big salad tomatoes so I used those. I used 2 large tomatoes.
Sprinkle those on top.
Cover and bake according to fish instructions.
I only had the fish in the oven about 15 mins and the toms stayed on the firm side which was great!

You could do the above with chicken or pork probably. Just put the toms on about 10-15 mins before the end of your baking time so they do not turn to mush.

I love when the Lord inspires me with something yummy we have never tried! This meal is definitely a "keeper!"
