Vegetarian Celiac, almost vegan, except for honey and yogurt. Vegiac.com is a good source for info.

I tend to eat very simply:

Breakfast:
Granola or Muesli - homemade
fruit
juice
coffee

Due to her food allergies, I believe her site is not all vegetarian anymore. But she still has great recipes for all - esp. Celiacs.
