In a bowl mix 2 cups of GF mix (see note), 1 1/2 teaspoon xanthan gum, 2 teaspoons of sugar, 1 teaspoon salt, 2 teaspoons milk powder. Add 1 cup of warm water and beat on medium speed for 1 minute. Form a ball than divide into 6-8 parts. Take some plastic wrap and dust with cornstarch. Roll out to desired circle thickness between 2 sheets of the dusted plastic wrap. Stack them on wax paper individually to keep them from drying out while you make the others. Cook tortilla on a medium -hot griddle-skillet. About a min/side
I have found leftovers just don't do well, needs to be eaten as soon as made. Since it takes such a short time to cook them I make them as I am ready to eat it. For this reason I usually only do 1/2 of the recipe since my family can have reg. tortillas. I use this for making fajitas, enchiladas, and burritos. When making enchiladas they are ok for leftovers.
NOTE:
I keep this GF mix on hand
3 cups white rice flour
1 cup potato starch flour
1/2 cup tapioca flour
I hope you enjoy this. I really missed having fajitas and this sure hit the spot. I have also used this and made a wrap. After you cook the tortilla spread it with garden veg. cream cheese, add thin sliced meat, shreded cheese, lettuce, carrots. I have wrapped this in plastic wrap and eaten it several hours later and it is fairly good.
