This is a recipe I've used for years before going GF. I tweaked it so we could make it GF.
I use the GF flour mixture of: 2c. Rice flour, 2/3c. Potato Starch flour, 1/3c. Tapioca flour
Yum Yum Bars
2 c. GF flour
2 t. baking powder
½ t. salt
2 c. peanut butter
2 sticks butter or margarine
1 c. white sugar
1 c. brown sugar
5 eggs
6 oz. Semi-sweet mini chocolate chips
2 t. GF vanilla
Cream peanut butter & marg. Then sugars. Beat in eggs one at a time (very important) until fluffy. Beat in vanilla.
Beat in dry ingredients just until well blended. We pig out on the batter. What’s left add the choc. chips to. Spread in well greased 9 x 15. Bake in preheated 350 oven for 30-35 mins. Don’t over bake. Enjoy! |
