Going to have to make something frozen -- I teach a class til 5, then a late one that starts at 7 (til 10!), so probably an Amy's dinner (they have several that are both GF and dairy-free -- the tamale pie is good, and also the shepherd's pie).

Homemade Italian wedding soup will be a starter with toasted dark bread croutons, followed by marinated angus strip steak, homemade whipped potatoes and a vegetable. _________________ Judy

I think suppers, or dinners or whatever you call them are the easiest, unless you are at a restaurant. But that's another thread!
If I get to craving chinese and don't want to drive to PF Changs I can make most everything by using Bragg's for soy sauce. Haven't found a GF hoisin sauce yet though.
Use rice flour if anything needs to be coated with flour. Cornstarch for thickening.
Mexican is easy with corn tortillas.
Good old american standby of meat and taters works.
Spaghetti is great with rice pasta. In the NW most grocery chains carry rice pasta now.
Go to the healthfood sections and look for some of the new (well, new to me) GF boxed dinners. I tried one (sorry can't remember the brand) that was alfredo sauce and I added leftover chicken. Pretty tasty and had leftovers for lunch the next day.

You have some great ideas -- what time is supper tomorrow?
I like polenta, too -- it's a good substitute for pasta. Saute up a couple of slices in olive oil, and add your fav sauce . . . nice switch from pasta. Also, I sometimes make a baked potato and put my sauce on that.

We did breakfast for dinner because it is my kids' favorite. We made waffles from the Bette Hagman GF gourmet book. I made a double batch so there are some left over for the kids to put in the toaster today. We also had bacon and pear slices. _________________ -Colleen

Have eaten rice pasta salad with Italian dressing and vegetables. Creamed chicken and vegetable soup. Also creamed chicken on GF bread or biscuits. Love soy pancakes with pure maple syrup for supper too.

| Brown rice pasta with spaghetti sauce, herb crusted chicken breasts with risotto, meatloaf with whipped potatoes, hamburgers with homemade mac and cheese, baked pork chops with rice, taco salad, potato soup, enchilladas, lentils and rice - these are a few things we have for our dinners. |

I made stuffed shells (Tinkyada brown rice of course!). I do a lot of Italian dishes just using the brown rice pastas and I love them just as much as non-GF!

I like to have breakfast for dinner alot. Its the easiest for me as I dont really like to cook. Thank goodness for Jimmy Dean sausage its GF and taste great.
I am thankfull for our Fred Meyer now to have a 4' section strickly for GF foods like Mrs Leepers box meals just add meat. My way of cooking, theres Chicken alfreado and beef stoganoff there just like hamburger helper but better.
Also Costco is now selling alot of gluten free things I just found a Progresso New England Clam chowder that is GF. Checked with manufacturer to make sure and they wouldnt confirm just said read the label(read it a million times to make sure) and its not bothered me so must be ok. Also they sell Marie Calanders Chicken Pot Pie soup YUMMY. this comes with another thats not GF but my family loves the others. |

Thought the new folks could use some ideas so I am bringing this thread back to life. Feel free to add your contributions.

OK, folks. I think it's been a while since we updated this thread. Help us all get new ideas by posting what you had for dinner.
Last night it was hamburger stew. Brown a pound of ground beef with chopped onions and minced garlic. Drain well. Add chopped carrots, celery and potatoes. Add 4 cups GF beef stock and simmer until the veggies are tender. Serve with biscuits and a green salad.
It's even better the next day for lunch!  _________________ -Colleen

Nothing too exciting here...need to go grocery shopping.
Had friends over unexpectedly, so made a GF baked macaroni and cheese, they brought bagged salad fixings, and made it at my house (they're non-GF, so that avoids CC issues.), and Roben Ryberg Rolls. Dessert was jam-filled brown sugar drop cookies. For those I used my old recipe using Wendy Wark's flour mix. They worked out fine. You know it's ok when non-GFers take cookies home with them! LOL
