Cut-Out Sugar Cookies

1/3 cup softened, unsalted butter
4-oz. low fat cream cheese
3 cups Gluten-Free Pantry Old Fashioned Cake & Cookie Mix
1/2 tsp. gluten-free baking powder
1/2 tsp. grated shredded lemon or orange peel
1 egg
1 tsp. gluten-free vanilla
1 tsp. orange or lemon juice

Beat butter and cream cheese together until fluffy. Combine 1 1/2 cups Mix, baking powder, and citrus peel. Beat into butter mixture. Add egg, vanilla and orange or lemon juice. Beat in remaining Mix. Cover and chill dough for 2 hours or overnight.

Preheat oven to 375 degrees. Divide dough in half. Roll one piece between two sheets of plastic wrap until 1/4 inch thick. Cut into desired shapes with cookie cutters. Peel off plastic wrap and set on cookie sheets lined with parchment paper. Bake 10 minutes or until edges are slightly brown. Do not overbake. Cool completely. Frost (recipe follows) or serve as is. Makes 24-30 cookies



Cream Cheese Frosting

1-1/2 oz. low fat cream cheese
2 Tbs. softened unsalted butter
1 tsp. gluten-free vanilla
1/2 tsp. orange or lemon juice
2-3 cups powdered sugar

Beat first four ingredients together until fluffy. Add half the powdered sugar. Beat well and add extra sugar as needed for smooth, thick consistency. Add color, if desired, and frost cookies.

I also use the Bette Hagman's flour mix (6 cups white rice flour, 2 cups potato starch flour, 1 cup tapioca flour) and substitute it in my regular cookie recipies. They turn out delicious and no one can tell the difference! My parents have a Christmas open house every year, and my mom made all of her cookies gluten free so I could eat them and everyone loved them! This is the easiest and cheapest way to make holiday cookies.

I have also bought the gluten free pantry old fashioned cake & cookie mix and made snickerdoodles with it and they are my favorite!

Mmmmm those do sound good!! This is what my wife makes me for Christmas Cookies.

GF Sugar Cookies:

1 cup white rice flour
1/4 cup soy flour
1/2 cup corn starch
1/2 tsp. salt
2 tsp GF vanilla
1 tsp GF baking powder
1/2 cup softened butter
1/2 cup + 1 tbsp. sugar
1 egg

Preheat oven to 375
Combine the flours & powder - set aside
Cream butter, sugar, egg & vanilla
Add everything to the creamed mixture
Roll into balls (like peanut butter cookies) and place on ungreased cookie sheet. Flatten.
Bake 6-10 min.

This makes about 3 doz cookies

Butter Cream frosting:
4 cups powdered sugar
1/4 cup softened butter
1/4 cup solid vegetable shortening
1/4 cup milk
1 tsp vanilla extract
food coloring is optional

This make a huge batch of frosting. Peg makes a 1/2 batch for this cookie receipe. But frosting keeps well in the fridge (about 1 month).

Thanks Al! for the yummy sugar cookie recipe! I haven't had a sugar cookie in almost 4 years and they were SO good! I was really impressed that I couldnt' even taste the difference. Very Happy They were just like regular cookies. I had some friends try them too and they loved them! Thanks again! Tell everyone to try that recipe!!

my DD is also allergic to eggs and dairy- anyone made these with substitutions?
