Really GREAT cookies

I ordered Pamela's Ginger cookies with almonds. I accidentally ordered 7 boxes instead of one, actually. Thank goodness they are delicious since I have so many! They are spicy and have a wonderful flavor and texture. The package comes with 9 soft cookies. I highly recommend them.

I also bought some Mi Del ginger snaps. We could not tell the difference between these and regular ones! Another winner!

The Mi-Del gingersnaps are very, very good which is a good thing as I think I might try a GF version of pumpkin pie for Thanksgiving. Instead of the evil flour based pastry crust, I'm going to make a crumb crust from the gingersnaps. It certainly has been interesting trying to figure out the whole meal, GF! Thank goodness I like to cook as I don't know what people do that are Celiac's that don't cook!
