My daughter's 29th birthday is on Friday. I am doing the meal, which in our family has always been by request. I "did" get out of making her favorite chicken casserole with crescent rolls on top, thank God
However..."Miss Torrid & Demanding" (not really....I just call her that when she won't budge!) is insistent on Mom's chocolate cake with white icing. The icing is not a problem (I am milk casein intolerant)....I will just add coconut milk. BUT....hurry you guys! I need a really good (not tasting like sand from the beach) chocolate cake. Honestly, some of these GF baked goods can be just so darned gritty....would like to send her and her family home with their tooth enamel intact!
I would especially love to find something sooooo good that the clan has no clue it's gluten free.
Seriously now...it has to be GOOD!

Hi Carole,
I have been happy with the 'Cause You're Special Choc. Cake Mix. Peg usually makes cupcakes just 'cause their easy to freeze and store. _________________ Al

I checked out their website. Looks good! Only problem is, I need it by Friday and I don't know if there is a store near me that carries it.
Has Peg ever used any of the mixes by Namaste? Their spice cake mix is outta this world. Someone highly recommended their Chocolate Cake Mix also, so if I get in a pinch where I can't find yours, I know I can get that one.

These mixes are carried by 2 healthfood stores that I usually go to. Of course, it probably helps that 'Cause You're Special is from WI.
No, we have not tried any of the Namaste stuff. I have a pizza crust mix sitting on the closet just waiting to be made.

I had Miss T & D doubled over today. We are Irish. Grand-daughter's name is Reagan. She had MAJOR colic for 5 months...worst I ever saw. "She Devil @ 7:00" we called her. Like someone flipped a switch!
Found in an Irish store today, a baby book. "Regan" means "furious and impulsive"!
What an offspring for "Torrid & Demanding", huh??
I sure as hell better pull this cake off, Al! HA HA HA |

I'll go post a recipe in the RECIPE forum -- it's a recipe from France), and is to die for (and perhps literally, when you see the ingredients).
My daughter (BG, which stands for brat-girl) also has to have her favorite chocolate cake on her birthday, and this is the recipe.

The chocolate cake by Namaste is incredibly good. I don't buy it very often because it is pretty expensive, but it is definitely worth it. I usually split the cake mix up into 3 baggies and bake 1/3 at a time. I can get 1 dozen small cupcakes each time, and we don't have the extra cake around the house to taunt me. _________________ -Colleen

Thanks to everybody for the great tips!
Lexi - I looked up your cake mix. Ooooh. It sounds great. I am dairy intolerant, however, so I would not know for sure what to do with the butter part. I won't be baking this version for tomorrow, but I will try it!!
Today I bought the Namaste Chocolate Cake Mix because I am running out of time. I didn't see a whole lot out there this afternoon and from experience I do love the Namaste Spice Cake.

Hi Carole,
I suppose it's too late, but being Friday the 13th if you have bad luck with your mix, try this cake. It's great!
Gluten Free Wacky Cake
1 1/2 cups GF flour mix
1 1/2 tsp xanthan gum
1 cup sugar
3 tbsp cocoa
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 tbsp vinegar
6 tbsp oil (I used canola)
1 cup cold water
Preheat oven to 350F.
In a large mixing bowl, combine flour, sugar, cocoa, soda and salt.
Make three "wells" in the flour mixture. In the first well, put vanilla, in the second the vinegar, and in the third the oil.
Pour the cold water over the mixture and stir until moistened.
Pour into an 8x8 pan.
Bake at 350 until it springs back when touched lightly...about 30 min.
I also added about 1/4 cup plain yogurt for added moistness.
I used the following flour mix and there wasn't a bit of grit.
Carol Fenster's Sorghum Corn flour Blend
makes 4 1/2 cups
1 1/2 cups sorghum flour
1 1/2 cups potato starch OR cornstarch
1 cup tapioca starch
1/2 cup corn flour |
