Our neighbors brought supper over to us this evening and was surprised how simple yet so good. They took a chicken and did it just like a roast. Added carrots, potatoes, celery, oinon and baked it. Can't believe I had never had it before. It will be something a make from here on.

Roasted chicken is one of my very favorite foods. Sometimes I'll spatchcock it and other times I'll just roast the quarters. Then I'll add some fresh rosemary, garlic, lemon and I'm in heaven. There's nothing better. Glad you enjoyed the roasted chicken.
Spatchcock- cut the back bone out of the chicken with shears and open the chicken to lay flat on a rack on a sheet pan. Takes 1/2 the time to roast.

I also use this technique on the grill with Cornish game hens -- stuff a bit of rosemary under the skin, drizzle with lime juice and olive oil. |
