Another dinner last night

After Torrey's inspiring post, I thought I'd post my dinner last night. It was one of those "Clean out the fridge" dinners. These are veggies we usually have in the fridge.



1-2 tblspn of olive oil
1/2 cup of chopped white onion
1 tspn of garlic (or as much as you like. This was freshly whized up in the food processor - so it stronger than store bought.)
1-2 cups of chopped broccoli
1/4 of a yellow bell pepper coarsely chopped
1/4 of a green bell pepper coarsely chopped
6-8 baby carrots quartered
1/4 of zucchini cut in moons 1/4" thick
1 cube of frozen basil pesto (or 1-2 tblspoons of basil pesto)*.
Juice of 1/2 of medium lemon.
McCormick's Montreal Chicken Grill Mate Seasoning.
Whatever shrimp that were left in the bag (probably 10-15)

I got out my trusty pan, heated it up, put a few slashes of olive oil in it. Threw in the onion and garlic. Sauteed that for a minute two. Next I threw in my chopped broccoli and my cube of frozen pesto*. Sautee that for another 2-3 minutes. Add the carrots. Sautee for another 1-2 minutes. Add the peppers & zucchini's and shrimp. Squeeze a 1/2 lemon over the top. Plus a number of shakes of the Montreal Chicken Seasoning. Give it a few more stirs to combine the seasoning.

I added the veggies that take the longest to cook 1st and then started working my way down. I like my veggies slightly crunchy when the dish is all done. I really don't like soggy peppers. The shrimp were peeled, deveined and cooked already so they only needed to be heated up.

As I said this is what I had laying around. I don't really measure. You can mix and match whatever veggies you like. Yes you could chicken in here too. This is kind of a take off of our Broccoli Chicken w/ Pesto which has become a favorite of ours. That will be for another post Wink I have story to go along with that one too! I can laugh about it now.

*The reason I have cubes of pesto laying around is...We have a farmers market every year and one of the vendors sell fresh basil and other herbs. She said what they do is make up a bunch of pesto and pour it in ice cube trays and freeze it. That way they can have fresh frozen pesto in the dead of winter!! I burned out our little stick blender ( w/ chopper attachment) by making pesto every week for 3-4 weeks Shocked I can't wait for this year to roll around because we got a Cuisinart food processor. It's gonna be soooo much easier to make pesto now!! I'll only have to make 1 big batch instead of make several smaller batches due to limited bowl capacity Very Happy

I also made a batch of almost crushed garlic too. I got 1lb of bulk garlic at the store. A whopping 2.79 per lb. I peeled about 3-4 heads (I still have about 3 heads left out of that pound), threw 'em in the processor. Added 1 tspn of lemon juice. Scrapped down the sides a few times and whizzed it around some more until it was really finely chopped. Put it in a sealable jar.

Oh, now I feel bad that I didn't take a photo of my very colorful dinner! Embarassed
I did bring leftovers in for lunch, but I have one of those Ziploc containers and it just wouldn't do the dish any justice!
I *promise* to take pics of the next homemade dinner! Wink

Al, that looks yummy--how do you think it would work with chicken? (I don't eat seafood...) Broccoli and peppers--two of my fave veggies! Very Happy

Thanks gang!

Torrey, I stared taking pictures of our food probably 1-2 years ago. Seeing the pictures with the recipe just "brings a bit more to the table" so to speak Very Happy I wanted people to SEE that GF food is not bland, boring or yucky!!! It's every bit as good, if not better than that gluten polluted food the others are eating. Smile

When I first started taking pictures, Peg would just laugh at me and roll her eyes. I'd be sprawled out on the kitchen counter taking pictures of God-knows what. Now...she's used to it and accepts it as "normal" behavior. LOL.

Oh...I added the recipe in my original post.

Thanks so much for sharing your "art" and the recipe, Al! Very Happy

We went over to my boyfriend's sister's townhouse last night for dinner, and she went above and beyond the call of duty to make it a totally GF meal. Surprised It was awesome, and I was so tempted to ask if I could take a picture, but I chickened out. Embarassed (No pun intended!! Wink )
In any event, she made chicken enchiladas from scratch and they were SO YUMMY! I ate more than anybody else at the table--I was so happy to have something so good and GF to eat!
It was so nice to realize, again, that it's *very* possible to be GF and have delicious meals still!

This past Sat. I bought stuff to make chicken enchiladas. Never have made them before but thought I would try. Most recipes seem to want you to add a can of cream of chicken soup. Do you think you could get a recipe to share? I have lately been experimenting more with freezing foods. The lasagna I made recently did wonderful frozen. Last Sat I fixed speg and froze it. I buy Amy's meals once in a while and they are so expensive so thought I would try making some things that I could microwave and chicken enchiladas is one of them. Thanks a head of time. Glad you enjoyed such a great me. Sure know the feeling of eating something that is wonderful that is GF.

I started laughing reading this -- only because I'd just watched a movie where the character (Natalie Portman) says she doesn't eat fish. She's pawing through this guys briefcase, looking at his stuff, including tuna sandwiches. He returns and catches her, and says, "You didn't fancy my sandwiches?"
"No, I don't eat fish."
"Why not?"
"Fish piss in the sea."
"So do children."
"I don't eat children either."

Anyway, it's funny when you're watching it. Very Happy

(The movie is Closer -- a cast of 4, and one extra with a line or two.)

Ok, so I just completely laughed out loud in my cubicle/pod when I read that quote from Closer, Lexi! Laughing Too funny! I haven't seen the movie yet, but that quote is great!

Yeah, as if gluten intolerance wasn't difficult enough! Razz I am *the* pickiest eater around! My seafood-loving boyfriend is determined to get me to eat a piece of tuna one of these days...I don't think so hehehe

DOnna,

Not trying to hijack Torrey's enchilada thread, but hope this helps . . .

I live here on the Mexican border, as you know, and we do lots of enchiladas. The basic recipe is quite simple: roll up cooked, shredded chicken in the corn tortillas. (If you like, you can also roll in some shredded cheddar or Mexican-blend cheese -- it also tastes really good if you mix some cream cheese into the shredded cheese -- extra creamy.) THen put some enchilada sauce in the bottom of a 13 x 9 baking pan, put in the rolled enchiladas, cover with sauce, and a bit more cheese on top, and bake. As far as sauce, just buy the canned stuff, or find a recipe for making your own. Either way is good!

I'm not sure if I'm considered a picky eater, but I am definitely a food snob. I only like the best, and don't want to eat stuff that isn't the best. Chocolate? Has to be the finest . . . I like my poultry and beef to be hormone-free, antibiotic-free, etc. THere is a difference in taste, and I know it, and I'm not going to eat anything less. Coffee? Has to be superb, and made in a French press, for optimum flavor. EVERYTHING is that way with me. I like most foods (no beets, no liver, thanks), but only want the very best.

Yes, the movie is funny! Jude Law plays the guy whose briefcase she is going through in that scene.

Torrey, I don't eat seafood either. That was one of the benefits of being allergic to iodine. I now had a good reason not to eat the nasty stuff. I used to go spend summers in New Orleans and my brother in law who was a gourmet cheft would get so put out with me because they did a lot of seafoods. Pour hubby though because he loves it. Daughter will fix him a seafood dinner when she is home.
