I made this cake yesterday for my daughters 18th b-day party. It was AWESOME! Grandma & Grandpa had never eaten GF baked goods before and they couldn't tell the difference between GF and regular cake.
I froze the 2 layers and then sliced them in half to create 4 layers. Then I built the cake with vanilla custard between the layers. I frosted it with the Cool Whip/pudding concoction and it was really tremendous! this is definitely a cake I can use for special occasions!!
