Basic White Cake
2 sticks of unsalted butter, room temperature
+ more to butter the pans
3 cups gf flour
1 Tbs + 1 tsp baking powder
3/4 tsp salt
1-3/4 cups granulated sugar
2 tsps pure vanilla extract
1 cup whole milk
1 8oz. cup gf vanilla yogurt
1 egg yolk
6 egg whites, at room temperature
Place the oven rack in the center of the oven and preheat to 350°F. Grease the bottom and sides of a 13x9 inch baking pan. Line the bottom with parchment paper. Grease the top of the parchment with butter. Lightly flour the bottom and sides of the pan with gf flour. Tap out any excess flour.
In a large bowl, whisk together the gf flour, baking powder and salt. In mixer, beat the butter on medium speed until smooth, about 1 minute. Add 1-1/2 cups sugar and vanilla extract; continue to beat until well combined and fluffy, about 2 minutes. Stop and scrape down the sides of the bowl. On low speed, add 1/3 of the dry ingredients to the butter mixture; mix until combined. Add half the milk; mix until combined. Continue adding dry ingredients and milk alternating as you go and ending with the dry ingredients. Scrape down the sides of the bowl; add the yogurt and egg yolk; beat for about 30 seconds to make sure everything is thoroughly combined. (The batter will be thick.)
In a separate bowl, beat the egg whites with an electric mixer until soft peaks form. Increase the speed to high and gradually add the remaining quarter cup sugar. Continue beating until the whites form medium-firm peaks. Scoop out about one-quarter of the egg whites and stir into the cake batter to lighten. Gently fold in the remaining egg whites until just blended.
Scrape the batter into the prepared pan. Bake until the top is golden or a toothpick inserted into the center comes out clean, about 30-35 minutes. Set the pans on a rack and let cool for about 15 minutes. Invert the cake onto a rack, lift off the pan and peel away the parchment paper. Let cool completely before frosting.
If you would rather have a round layer cake instead of a sheet cake, the above recipe will make (2) 9-inch round cakes for a layer cake _________________

Mrsppmrxky uses the following GF mix for the white cake.
Gluten Free Baking Mix
Rice Flour (2 parts) 6 cups
Potato Starch (2/3 part) 2 cups
Tapioca Flour (1/3 part) 1 cup
Mix well and store in an air tight container.

My son is 14 years old and a sweetie, came to me this morning all concerned. Usually he and my husband buy a pre-made cake or cheesecake for my birthday. He said, "Mom do they sell gluten free cakes at the store?" I told him that I did not know of a place near our home that did. He then asked me if I had a recipe for a cake that he could bake for me for my birthday. I told you he was a sweetie. Do you guys know of a cake and frosting recipe that is fairly easy and fool proof, (he hasn't baked much) that he could try his hand at? I am thinking of something he can bake and just frost it in the pan. _________________ Connie

He's a keeper! (My son is like that. He is now 21)
The following recipe taste very similar to you Duncan Hines cake mixes. (If you want, you can put all of the dry ingredients in a bag. (I have made 4 up at a time to have for when I need something fast.) You son can then just add the eggs and liquids.
Basic White or Yellow Cake - Gluten Free****
6 T butter, margarine, or 1/4 c vegetable oil
1 c granulated sugar*
1 t vanilla
2 large eggs (or 3 egg whites)
1 c white or brown rice flour
6 T Potato Starch
2 T Tapioca Flour
1 t Xanthan Gum
1/4 t Baking Powder
1/4 t Baking Soda
1/3 t Sea Salt
3/4 c buttermilk -or-
2 t lemon juice with enough milk (cow, rice, soy) to make 3/4 cup
Preheat oven to 350°F. Grease 9x5-inch loaf pan or two 5x3-inch pans (or other pans - see below). Cake rises better in smaller pans. Set aside. Using electric mixer and large mixer bowl, cream together butter, sugar, and eggs on medium speed until thoroughly blended. Add lemon peel. In a medium bowl, combine flours, potato starch, xanthan gum, baking powder, baking soda and salt. In another medium bowl, combine buttermilk (and fruit juice concentrate, if using - see below) and vanilla. On low speed, beat dry ingredients into egg mixture, alternating with buttermilk, beginning and ending with dry ingredients. Mix just until combined. Spoon batter into pan(s). Bake 9x5-inch loaf for 50-55 minutes; 35-45 minutes for smaller pans or until top is golden brown and a toothpick inserted into center comes out clean. Cool cake in pan for 5 minutes, then remove from pan and cool on rack.
Serves 12.
Cupcakes:
Bake 12 cupcakes for 20-25 minutes. Grease 7 flour pan .
Layer Cake: Bake in 9-inch round nonstick pan for 35-40 minute or two 8-inch round nonstick pans for 25-30 minutes. Grease pans, then line with waxed paper or parchment paper and grease again for easy cake removal. Cool on wire rack.
Sheet Cake: Grease 11x17-inch pan. Line with waxed paper or parchment paper if you plan to remove cake from pan before frosting. Bake for 25-30 minutes.
*Sugar Alternative: 2/3 cup pure fruit juice concentrate (thawed but not reconstituted) in place of 1 cup granulated sugar. Reduce milk to 1/2 cup. Increase baking soda to 1/2 teaspoon. This version produces a decidedly less sweet cake. For a sweeter, stronger fruit flavor, simmer 1 cup concentrate on low heat until reduced to 2/3 cup. Cool slightly. You may also us 2/3 cup honey, but reduce milk to 1/2 cup.
Icing
6 T butter softened to room temp.
1 tsp vanilla
1/3 cup cocoa
1 box of confectioner sugar
about 6 T milk
Mix well and add milk 1 T at a time to get the desired consistancy.

Maybe I can help. I take you don't have a store close by that has GF cake mixes. I am going to the health food store tomorrow and would be glad to pick you up a mix and mail to you. It couldn't cost that much and all he would have to do is add the eggs and whatever. _________________ Donna

We do have one health food store that I am going to call today and see if they carry gluten free cake mixes. I haven't been looking for them when I was there and so didn't notice if they had them or not. Actually, I have to pick up my daughter from drama practice here in a little bit, I will just swing by and see. Thank you for the offer. Mrs. P,
I finally made the first cake(Basic White Cake) in this thread on Friday morning and we finally cut into it a couple of hours ago. It was absolutely delicious--two gluten eaters took two pieces! After sitting out for 3 days it was still moist. I'm looking forward to playing around with different variations of frostings and fillings that might compliment the cake.
Looks like the Basic White Cake might be the first TNT recipe! I suggest that everyone give this recipe a shot. It is really good.

We would indeed have a feast. There must be a rest stop between us. We'll have to plan better next time.
Have you had rain this afternoon? We had rain that appeared to be coming down in sheets. A large branch of a tree fell right in front of my car...thank goodness the radio wasn't on or I would have gotten hit.

TEC, I am glad that the recipe worked out for you. That is the recipe that I used for the wedding cake last year. We thought it was a really good recipe. I am also a big fan of the Cream Cheese sheetcake! I have a lot of compliments off of that one when I make it for customers. _________________
