I just went to your website. Your hamburger buns look fabulous. Next time my son runs out, I'll try those for sure.
I was interested in your sour cream rolls adapted from a Robin Ryberg recipe, but lots of the ingredients have a ? instead of a unit of measure. For example: ? cups + 2 tbsp potato starch.
I'm not a terribly good guesser, I need to follow a recipe. Would you mind posting it here?

Thanks for letting me know, Linda! I had cut-and-pasted some of the already typed out recipes from my computer and I guess that some of they symbols mustn't transfer through properly. I have gone through and checked/corrected all of the ones that appear to be problematic. I think that if you just refresh on the page if it still looks funny, then it should be working.
Just remember with the buns that the less extra flour you have to add, the softer the final results will be. It's tricky to work with, but once you get the hang of it then it's not so bad.

Hi Linda...just noticed that you're in Calgary. I am from Medicine Hat, AB, but I am going to law school down here in Toledo! Small world, huh? :) My sister (also celiac) often goes to Calgary and I know that she has been looking for a good place to pick up bulk GF baking supplies/flours. Any hints?

Have her try Amaranth Whole Foods Market #7 Arbour Lake Dr. N.W. ph: 547-6333
It's in Northwest Calgary, closest big intersection is John Laurie Blvd. & Nose Hill Drive NW. Head west on John Laurie past the Crowfoot YMCA and there's one set of lights, an unmarked intersection and then a four way stop. Amaranth is on the far side of the four way stop on the right. It's in a school zone. She can't miss it.
They have one wall at the end of the store full of bulk flours, the gluten ones on one end and the gluten free on the other end with other stuff in between, so there's no cross-contamination. They've got Tinkyada pasta 300g for $3.29, lots of Celimix, Kinnickinnik, Pamela's mixes, lots of cereal, "rice krispie" bars $4.25/box ($4.99 @ Safeway or $5.29 @ Co-op), El Peto products, Glutino products, frozen waffles, torilla shells, pies, bread, etc. It's spread out all over the store, so keep an eye out. Usually they have a red dot and a card that says "Celiac OK".
It's my 6 year old son in our house who has celiac, so I haven't tried a lot of the stuff, he's "selective". We stick to flour, Envirokids rice krispie squares, Thai kitchen soup, and cereal. I just bought some frozen waffles, but he hasn't tried them yet. If your sister needs "toasta bags" or whatever they're called, to use a gluteny toaster for her stuff, they have those at the Rafters store at Crowfoot. If you turn left after the lights, but before the 4 way stop to Amaranth, turn right at the T intersection and almost immediately turn left, the Rafters is in there.

cebel I made your bun recipe tonight for supper. Thank you! It was very good. The texture was soft and it held together very well for a bar b que sandwich. _________________
