Hi there,
Can anyone suggest something good to coat my salmon patties in before I fry them? I used to use packaged bread crumbs but don't know if they make these gluten free. If not, would some type of corn meal be ok? Let me know and thank you!

I just use GF breadcrumbs when a recipe calls for breadcrumbs. I keep Whole Foods Bakehouse breads in the house. So I just defrost a piece or two of bread and run it through the food processor.
Corn meal may work, or even cornflake type cereal.

I like to mix my breadcrumbs with ground flax seed (or flax seed meal), and sesame seeds.
I'm a real "particular " cook--about 1/3 of each, adds a little more flavor. _________________ The Love we withhold is the pain that we carry.

I made salmon patties this weekend and they turned out great! I used corn meal for the coating, YUM!

You all are ALWAYS invited!!!! It is an open invitation :>) As a matter of fact, I sat an extra place setting and no one showed up!
It was GOOOOooooood. We had the salmon patties, fried potatoes (in olive oil of course), peas and GF cornbread. YUMMMmmmmy
Well, maybe next time. Thanks again for the ideas and the "company".

Susan,
I'm glad to hear the corn meal worked for your salmon cakes. Did you dip them in egg or anything before adding the corn meal?

Actually, I mixed up all the ingredients (like I do with my meat loaf) and then made them into patties. I used Chicken of the Sea boneless pink salmon, egg, a TOUCH of milk, and the corn meal. I fried them in a small amount of olive oil.
They turned out VERY good :>)
I tried not to look at the carb content of the corn meal though :>(
If anyone makes them, let me know if you like them.
