Just got this out of the oven....and man oh man ! ! ! is it ever delicious. Or maybe it's because it's one of the first 'cake-like' foods (besides the wonderful brownies) I've had in over 2 months, when I was first diagnosed.
Got a book from the local library..."The kid-friendly food allergy cookbook...more than 150 recipes that are: wheat-free, gluten-free, dairy-free, nut-free, egg-free and low in sugar" by Leslie Hammond & Lynne Marie Rominger. Amazon is selling for under $10. Some of the reviews aren't very good, but, that's because (even in my humble opinion) this is mostly a wheat & gluten-free cookbook. BUT, anyway......here's the recipe:
1/4 C. butter, room temp
1/4 C. sugar
3 eggs
1 C. masa corn flour (I used Bob's organic 100% stone ground whole
grain corn flour)
2/3 C. cornmeal (I used yellow cornmeal...I've since thrown away the
package, but I think it's self-rising)
2 t. baking pwdr
1 t. baking soda
1/2 t. salt
1 & 1/4 C. sour cream
1/2 C. sliced green onion (I used 1/3 C. diced vidalia)
1 C. frozen corn (I used straight from freezer)
1 & 1/2 C. shredded cheese (I used medium cheddar)

In a mixer, cream butter & sugar. Add eggs & blend. Add corn flour, cornmeal, baking pwdr & soda, salt & sour cream. Blend til smooth. By hand, stir in the chopped onions, corn & shredded cheese.
Pour into a greased 9 inch baking pan or quiche pan. Bake in a preheated 350 degree oven for 25 mins.
Variations: add 1 C. chopped green chilies or 1/2 C. sliced mild jalapenos to batter.....(this would taste great - I'm gonna try it next time - just a few)
They give a dairy-free & an egg-free variation as well.
PLEASE NOTE: "t" = teaspoon "C." = cup
With my oven, this took 40 mins to bake til done. Could'a been cause of adding 'frozen' corn to the batter, could'a been cause I used an oblong baking pan...approx 7" X 10". Either way - it is wonderful !
Oh ! And I just took the banana bread out of the oven...I'll let ya know  |

Nothing I like better than to hear a Celiac's reaction to a great GF recipe!!!!
It's enough to make you do the happy dance! Thanks for posting the recipe.
As for myself, I nearly went into an ecstacy coma after having my first strawberry shortcake in over a year. Used the Whole Foods Market cream biscuits from their GF line of baked goods. Toasted them lightly to brown them a bit and warm them up, then pile on the strawberries and cream....Mmmmmmm! |

Noatak.....You're so right about the 'happy dance', I was dancing all over the house. Then I think I may have fallen into a 'corn coma' Two pieces put me on the couch with a satisfied belly & a smile on my face.

This freezes really well  |

LOL on the "corn coma"!!!! I know how you feel. The biggest problem is not going overboard with eating something you've missed and have adapted to GF. It's mind-boggling how much food you can eat when your tummy heals and feels good again.....oh, yeah...this is what it's like for others!  |
