Oh Yeah Baby ! ! This is AS GOOD as my old 'wheat-flour' version.....
While I eat the second piece, I'll type the recipe (from the same book...kid friendly recipes)
3 ripe bananas
1 C. sugar
1/2 C. butter (I always use sweet-unsalted butter when baking)
3 eggs
1 t. vanilla (I used 1 & 1\2 t.)
1/4 t. salt
1 t. baking soda
1/4 t. cinnamon
2 C. rice flour (white)
1\2 C. coarsly chopped pecans (I used 2 handsful pecan halves, then
chopped them very little)
* * * * * * * * *
It calls for a food processor, but, I used my mixer.....schmoosh bananas on plate & put aside...blend sugar & butter, add eggs, vanilla & schmooshed bananas til just blended. Then add remaining ingredients & stir by hand.
Pour into a greased loaf pan & bake in a preheated 350 degree oven for 60 mins....(in my oven it took approx 65 mins.)
As with the corn bread recipe, the girls also give dairy-free, egg-free, nut-free & low-sugar variations......oh yeah, "t" is teaspoon, "C." is cup
It really is good  |

Thanks for the recipe.....I am making up my own GF cookbook and have copied so many recipes to try from this site. I actually am enjoying re-learning how to bake GF style! The only difference now is that I have to watch how much I eat of this stuff as NOW I can gain weight!  |

I believe I'll begin my own GF cookbook as well. I've always been a 'cookbook' collector of sorts.....I see a garage sale in the very near future or I may try to convert some of the recipes....

| I was rather upset at first to think all the great cookbooks I have accumulated over the years would never be used again. Now that I am getting the hang of GF cooking, I think I will keep some of the better ones and just adapt recipes as best I can. I refuse to give up my Julia Child collection! I did start a 3 ring binder cookbook that is already filling up fast with good GF recipes. There are many delicious recipes out there and I never would have thought that just 1 year ago! |
