Okay, last night my DD called and said that she had found a very easy macaroon recipe. I had misplaced my gooey, chewy recipe years ago and the only one I could find was a meringue type cookie.

You would need to use Parchment paper for this recipe. With the Passover coming soon, this would be a great recipe for you since it has no yeast.

Easy Macaroons

16 ounces of shreedded coconut
1 can of Condensed Milk (not evaporated)
2 teaspoons vanilla flavoring (we used 1 tsp of vanilla + 1 tsp. of almond)

Mix together in a bowl until well blended. Drop by rounded teaspoon onto the parchment paper lined cookie sheet.

Bake in a moderate oven (350) for 8 minutes. The tops should be slightly browned, so time may vary depending on your oven.


(For 1/2 of the mix, I added not quit 1/4 cup of cocoa and mixed that for the remaining mix. These were less gooey and very good.)

I think that you could change this to add some chopped nuts and possibly a few choclate chips to have a variety.
