Wendy, I am with you. Today being my first official day of gluten-free and I am also a vegetarian. Double the challenge. I just say now I won't eat anything that ends in "eat" - No mEAT, no whEAT!
Actually, yesterday was my first totally gluten free day, and I have not really seen a difference since I have reduced the gluten the last few weeks. In fact, yesterday I was in more pain than I have ever experienced, to the point that I couldn't sleep comfortably on the side that hurts the most. That gave me a good dose of determination to kick the gluten habit and see if I feel better.
Made my first loaf of gluten free bread Sunday from a pre-mixed product, and it's not bad (but expensive!) I am eagerly starting to read my books that arrived yesterday - "The Gluten Free Bible" and a couple of Gluten-Free Gourmet cookbooks.
Any tips for vegetarian and gluten free?

Hi Dee,
I'm glad to hear today is your 1st offical GF Day! Write it down on the calendar so you celebrate it each year I failed to write mine down, so I just picked a day LOL!!
I myself don't have many tips for you since I am an omnivore
But if you are looking for recipes for Veg. Celiacs...here ya go...

The Gluten Free Bible may be new, but there are many factual errors in the book. While it may be easy to read, the author recycles some of the same old errors from her previous book. Newly diagnosed celiacs need to be careful to double check their facts, preferably with original sources like food manufacturers. Some of the resource information about support groups is wrong. Don't be a victim of the bad advice in this book.

Hi Chris,
I have not seen the book yet, but I have heard this too. Thanks for the warning. Maybe we need to make a seperate post so that it doesn't get buried.
I agree, everybody needs to double check the information...even the info on this site! Mistakes happen.
I saw your table at the GIG conference in Chicago. The Restaurant awareness program is great! I have a link in the Dining Out forum to your site. We need to get more places in the Midwest!
I think working with GIG, that might happen.

Hi all. I tried to post earlier but I can't find it so I'll try again. Yesterday was my 1st totally GF day. It's not bad, just a lot of planning to get used to. I saw somewhere that ice cream is a no no. Al, you set me straight with cereal. Tell me it ain't so about the ic cream!

Glad to hear you're getting along OK! Day 1 is in the record books Yup, this diet does take a lot of planning.
Ice cream is just like any other food - it needs to be checked. Ice cream is NOT as difficult as cereal! LOL!!

Thank you Aklap for posting the Symptom List.
I have previously read the Symp/list but with the Brain Fog it takes a little while to absorb.
I found the answer to two problems that have foxed me over the past four yrs.
Cheilosis + Angular Cheilosis
I could not understand why my lips always felt dry & skin peeling, corners of lips cracking. I always thought it was due to our weather. I take my Dogs out twice a day for walkies. I could understand the Winter months
having dry lips but not the Summer. Nothing helps tried all sorts of creams.
Still a problem.
Scaly Dermatitis
Started with general body skin dryness. Itchy skin++ & then my legs started to look as though they had dandruff+++++. I thought it was due to soap/bath/shower gels etc. Used lots of body lotion with no effect. Lo & behold 7 wks ago commenced Vit B12, Vit B Complex & Omega 3 the general body skin problems have disappeared.
Seven weeks ago I could not fully comprehend the Symptom list. The good news is, the Brain Fog must be clearing a little for me.

Hi Dee,
I made up my own recipe for beans. I don't use any flour, meat stock, pork, or anything chemical in the recipe.
Soak 2 cups dried pinto beans over night, in water with about 2 tsp. of ground cumin in the water. The cumin removes most of the gas.
When you are ready to cook the beans:
Coarsely dice about 6 or 7 stalks of celery
Coarsely dice 1 medium to large sweet onion (Walla Walla's are good)
Crush and quarter about 6 to 8 cloves of garlic (don't worry it doesn't turn out tasting "garlicky")
In large stew pan, in a tablespoon or 2 of butter or coconut oil, saute the diced vegs, and garlic til they start to "sweat".
Rinse some of the soak water out of the beans, add the beans to the vegetables, and add just enough water to not quite cover the top of the beans.
Add 2-1/2 tsp ground cumin
1 bay leaf
about 1-1/2 tsp salt
about 1-1/2 pinch of cayenne pepper
about 1-1/2 tsp of ground chili powder (powder, not peppers)
about 1/4 tsp thyme
about 1-4 to 1/2 tsp celery seed
Cover & simmer about 1-1/2 to 2 hours or until beans are tender. You have to check the pot every 40 minutes or so to add more water as it cooks off.
These are actually better the next day.
