Hi, found this recipe and love it.


3 cheese spinach pie

1 1/2 cups minute rice
1 1/2 cups boiling water
1 teas. salt
1/2 c.mozzarella cheese
1 egg, beaten
10 oz. frozen spinach or fresh cooked and drained
3 eggs
1 c. grated feta cheese
2-3 tlbs. chopped onlins, sauteed
topping - 1 tomatoe, sliced and 2 tlbs. parmesan cheese

I use only mozz. cheese and I sautee my onions with a bit of butter.

Combine rice and boiling water in a 9" plate. cover and let stand 5 min. ( I just boil my water and cook the rice like you would on the stove, less time)

Stir in salt, mozz. cheese and 1 of the eggs. Use a spoon to press and form into a pie shell. Mix that and put it all into a pie plate. ( I mix my cooked rice and the mozz. cheese, salt and 1 egg and press it into a pie shell. The recipe makes it harder than need be)

Combine spinach, feta onion and the 3 eggs, mix well.(I use more mozz. for this part instead of fetta) Pour the mixture onto the shell.

Top with tomato slices and sprinkle with parmesan. ( I have not done the tomatoes yet, I just have sprinled some parm. on top and other times no. I like it better without the parm. I have also used onion flaked instead of the fresh onion, just put them in from the shaker) Tasted good, stronger onion flavor than the fresh)

Bake at 400 degrees for 20 min. Or microwave at high for 10 min and let stand for 3 min. before serving. I bake it in the oven, I like it to get a little color.

Your welcome wheatfree. I was a quiche lover and this is a great substitute for the great flavor of quiche.

I will definitely try this as I miss spinach pie in general...like the Greek spinach pie. I would kill for GF pyllo dough!

Sarah.....I have seen mixes for crust for quiche that are GF....Gluten Free Pantry does one, which I bought but haven't tried yet. I'm hoping for the best as all their stuff is pretty good. However, rice makes a mighty fine substitute...thanks for posting this. Very Happy
