I make gravy the same way. By making a Roux with fat and flour, then mixing in the liquid.

I have had lots of luck using All Purpose Celiac Flour from Kinnikinnick. Yes, I know it is expensive. But I only use 2-4 tablespoons at a time and I think it is worth it.

I use it the same as regular flour when making gravy.
