Hello Everyone!
Most of you know that I am already on a GF/WF diet. However, I have a friend who is flying in to visit this coming weekend and she is lactose intollerant! So, I need to know what is good/ok for me to make that is GF/WF and lactose free/dairy free. If you have any good suggestions of easy things to have around or make for meals, let me know! If she can handle the Lactaid Milk in the milk section, that would measure just like regular milk in any of your recipes.
If she can't handle any dairy, then you could cook with coconut milk, you wlil just have to adjust some of the 'fat' (shortening, butter, oil) in your recipes. _________________

isn't butter dairy?? i thought it had cream in it...but maybe I'm wrong...but yes those are good ideas about the alternative milks...can I use soy milk??? Or does that require other substitutions in recipes when cooking w/ soy milk? Just curious... _________________ GF/WF B-Day: 11/22/2002 |

Again, I know more of CF than LF diet, but for a butter replacement, we use Willow Run soy margarine. I like the taste, and it cooks well. Smart Balance is another DF margarine we have used. Harder to work with as far as spreading and such, but other wise ok.
The only milk alternative we use here is Soy. Which we buy at Walmart (great value brand) One thing to keep in mind with soy, is that it's much thicker/heavier than regular milk. At least the soy milk I use comparing to the skim or 1% milk I use. When I make mashed potatoes, I use alot more soy milk than regular milk. Same with the breads I make.
Before I foget, Namaste has alot of GF/CF mixes that are pretty good, if you wanted to make any deserts/goodies. They also have waffle and pancake mixes too. I'll get back with more ideas soon. I have some paper work I need to work on while the kids are down for naps. _________________ Kristie M.

DOTK, sorry that I typed butter.......I meant margarine that is CF. I use the word butter for both........... I only cook with real butter for the family, but I knew you would have to not use butter, I was just trying to point out that the extra fat in a recipe would have to be adjusted.
If she can tolerate soy milk, then that would be great. _________________

| When I have a casein free guest visiting I usually use fruit juice instead of milk in my quick breads (pancakes, Apple Bread, Muffins, Ect...). Granola with some nut, or seed milk is also delicious! For lunch I make chicken baked or broiled in a casein free oil based salad dressing, served with a salad, broccali, or a casein free bread. Dinner is noodles with a GF/CF tomato sauce, and a salad. Naturally gluten free has a page of products that are Casein Free if you are looking for some freash ideas. Another place to look is the vegan section of your grocery store, sometimes they carry soy yougurts, mayo, and soy cheese. Making a GF/CF menu is a challenge, but with a little creativity it can be a culinary adventure to. Hope you have a great time! |
