I need help with new meals I can make for my husband. We eat the same things over and over. I'm not a great cook in the first place. I'm looking for something easy. Please help

what do you eat now? and what would you like to eat? there are some very simple things that you can make that are not hard. just let me know what you like and I will give you some recipies.

Welcome to the board! GF cooking does take a bit of getting used to. Have you seen all the goodies in the Recipe forum? http://www.celiacforums.com/forums/viewforum.php?f=8

I think you should be able to find something for hubby in here Smile

I agree what do you eat now? & what do you want? How experienced of a cook are you? How technical to you want to get? I suggest what ever you're cooking now, spice it up. If your like me, I can't eat the heavy duty spicy/hot/garlic stuff like I used to, do to the GERD w/my CD. But I do use alot of fresh organic fresh spices, try things like, fresh sage, cilantro, oregano, thyme, garlic, and fennel. Add them to meats, or veggies just before you serve them. They give food I nice infusion of flavor that might be different for you. Oh yea, try the DeBoles fettucini noodles, Not the Spaggetti type they aren't as good, but the fettucine, cook them al dente, add fresh tomatoes, diced chicken, chicken stock & and assortment of vegies of your choice, and of course fresh herbs, Basil works great, just do a little chiffonade on the basil just before serving, & drissle extra virgin olive oil & top with fresh goat feta, I can tolerate Goat cheese, I am lactose intolerant due to the CD I guess. But be creative with your food. Bon appetite. Oh yea, try a fried brown rice dish, with fresh veggies & use a wheat free tamari for the soy sauce, or braggs liquid amino, it taste great.

Tinkyada Fettucini is good too. I want to try the DeBoles, but no one has it. Their lasagna noodles are great!!

...just do a little chiffonade on the basil just before serving...

If you don't watch FoodTV all the time (what, there are other channels??) Smile Here's the definition...

Chiffonade: Finely shredded or chopped vegetables used in soups or salad dressings

Thank you to all who have replied to me. It's my first time on this site and I hope I'm replying correctly. We eat a lot of meat. Pork chops, hamburger and chicken. I'm a terrible cook. Plus my 2 year old doesn't let me spend a lot of time cooking. Is there such a thing as a quick meal to make?

I like to BBQ chicken breast fillets, dice them, and top a great salad with it. The chicken fillets only take minutes to cook, so this is a quick meal. I boil the eggs ahead of time, buy shredded cheese, bagged salad mix bacon bits, then adding a few favorites is easy. Ussually I add avacado, carrots, zuchinni, snow peas. my girls(ages4,7,&10) pick out their favorites but ussually eat it quite well. My husband eats tons and he is a meat and potato kinda' guy.
Another favorite EASY dinner is hamburger gravy over mashed potatos or rice. Fry hamburger(1lb.) add a can of progresso cream of mushroom soup, season to taste with garlic powder, salt, and pepper. Done. Instant potatoes, rice or GF noodles can be used for your base ingredient.
DO you like mexican? have a few fool proof recipes for seirously americanized mexican recipes. (i am a whimp to spicy stuff)

Hi -

I cook for one and eat very healthfully. You can make a big pot of rice, then freeze leftovers in individual containers, or plastic bags. It defrosts in the microwave in 2 minutes. Cut up some g-f sausage, add whatever veggies you like, stir in the rice with some g-f soy sauce, and you've got a pretty good meal.

Always cook a full recipe and freeze leftovers. They'll taste good next week if you thaw them out.

Have you found Mrs. Leeper's instant dinners? They are g-f and so good that my grandchildren eat them and love them!

How about some turkey enchiladas?

Brown one package of ground turkey. Add a box of frozen spinach which you have thawed and squeezed dry. Add a package of cream cheese, and a 16 ounce bottle of Pace picante sauce. Roll this up in 12 corn tortillas and put in a baking dish. Then cover it with a jar of Trader Joe's salsa verde and some shredded cheese, any kind you like. If you don't have Trader Joe's, use some other salsa verde, just be sure it's g-f. Bake at 350 F for 30 minutes. Leftovers are great, too.

Summer time is salad time. Marinate (sounds fancier than just saying 'soak') a handful of dried raspberries in some raspberry dressing. Use it as dressing on a romaine salad, also adding a handful of walnuts (they taste better if you toast them for 5 minutes at med heat in a teflon pan - then just wipe the pan with a paper towel), and some crumbled feta cheese. Yum!

I made a delicious bean soup the other night. I don't even know where I got the recipe.

2 cups pinto beans soaked overnight
Drain and rinse
Cover with 4 cups water, simmer for 5 minutes
Drain
Add:

4 cups water
1 can tomatoes
1 medium onion, chopped
3/4 cup celery, chopped
1/2 green pepper, chopped
1/2 teaspoon garlic
salt and pepper
sausage - any kind you have on hand, or leave it out if you wish
1 8 ounce can tomato sauce
1 cup g-f chicken broth.

Simmer for about 3 hours.

Easy and delicious.

Have you tried watching 30 Minute Meals on Food Network? She makes a fair amount of foods that are naturally GF, and I'm sure you can modify the ones that are non-GF (use GF noodles instead of regular ones, etc).
