I made baked Chicken Marsala that was quite good, and then used the leftovers in a salad for lunch the next day.
Baked Chicken Marsala
2 tsp ground fennel seeds (I partially ground seeds in my food processor)
1 tsp sea salt
1/2 tsp ground black pepper
1/8 tsp cayenne pepper
4 (6oz) boneless, skinless chicken breasts
16 small peeled carrots
3 1/2 c. low sodium chicken broth (actually I use Better than Bouillon)
1 can mushrooms, drained
2 shallots, thinly sliced
4 cloves garlic
4 Tbsp yogurt
Mix fennel, salt, and peppers in bowl. Rub chicken with oil and spices. Place in greased cooking pot.
Bring broth to low boil in small saucepan over med heat. Add mushrooms, garlic and shallots. Season with salt / pepper if needed. Simmer until sauce reduces (20 minutes)
Discard garlic and pour broth over chicken and carrots. Bake 350 degrees for 1 1/2 hours in broth and add yogurt before serving.
Cashew with poppyseed and lettuce Salad
1 head lettuce
1 c cashews
1 c. swiss cheese, shredded (mozarella okay)
Dressing:
1 c olive oil
1/3 c. vinegar
1/4 c. sugar (use less if you like)
1 tsp dry onion flakes
1 tsp poppy seeds
1 tsp dry mustard
Mix and pour over salad just before serving.
I added some of the above chicken (rewarmed) and a few blueberries for a new twist.
I'm into discovering herbs and spices, and fennel was a new treat for me.

'kebabs' are good - just thread a load of veg: celery, cucumber, peppers, tomatoes etc with some chunks of chicken onto a kebab stick - or if the kids are really young a drinking straw. My kids always love this one. The main problem is getting it to fit in their lunchboxes!! _________________ Kirsty
