Here are my changes So I guess I can call it MrsP's tortillas since more than 2 items were changed.
MrsP's Soft Bendable Tortillas
Ingredients:
2 cups tapioca flour
1 cup Multi-Grain Flour Blend*(below)
2 1/2 TBL shortening
2 tsp xanthan gum
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp sugar (optional)
1 1/4 cup milk or soy milk
-separate for rolling- about 1/2 cup asian sweet rice flour
I mixed the dough and allowed it to sit covered for 15 minutes. I then divided the dough into about 12 even pieces. I then rolled each piece out on my silicon pad and placed it in the hot cast iron frying pan for about 1/2 minute on each side. I place the cooked tortillas in a plastic tupperware place that was covered with a lid. This helped to keep them soft and pliable.
*Multi-Grain Flour Blend:
1 1/4 c. garfava flour
1 3/4 c. super fine brown rice flour
2 c. potato starch
2 c. cornstarch or ARROWROOT (I used ARROWROOT)
1 c. tapioca starch flour
1 c. sorghum flour or amaranth flour (I used sorghum)
