One of our favorites even before going GF. Works great for school lunches.
Molasses Popcorn Crunch
8 cups air popped popcorn
1.5 cups salted peanuts
1 cup flaked coconut
3/4 cup packed brown sugar
6 tablespoons butter or margarine
3 tablespoons molasses
1/8 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon GF vanilla extract
Preheat oven to 300 degrees. In a large roasting pan, combine popcorn, nuts and coconut.
Combine brown sugar, butter, molasses and salt in a medium saucepan. Cook and stir over medium heat until it is bubbling over the whole surface. Cook another five minutes, stirring a few times.
Remove from heat. Stir in baking soda and vanilla (it gets foamy looking). Pour over popcorn and stir to coat well. Bake in preheated oven for 15 minutes. Stir. Bake 5 minutes more. Remove to large bowl. Break into chunks as it is cooling. Cool completely.
We package these up into 1-cup portions so I can pack them in lunches. Sometimes I also substitute extra popcorn for the coconut and nuts.
