Bagels from Living Without
Spring 2006

Multi-Grain Flour Blend:
1 1/4 c. garfava flour
1 3/4 c. super fine brown rice flour
2 c. potato starch
2 c. cornstarch
1 c. tapioca starch flour
1 c. sorghum flour or amaranth flour (I used sorghum)

Recipe:
3 c. Multi-Grain blend
1 tsp salt
2 tsp flax meal
1 1/2 tsp egg replacer
(instead of flax meal and egg replacer, I used 1 egg)
1 T. xanthan gum
1 T. yeast
2 T honey
2 T oil
1 tsp cider vinegar
1 1/4 c. warm water

Brown rice flour, for forming bagels
Cornmeal for cookie sheet
boiling water + 1 tsp sugar
eggwash: 1 egg white + 2 T cold water

Recipe says it makes 8 bagels, but I made 12 smaller bagels. Baking time was still 25 minutes

Oven: 375F
Line a cookie sheet with parchment paper and sprinkle with cornmeal.

Put Multi-Grain mix, salt, flax meal, egg replacer, xanthan gum & yeast into a mixing bowl and whisk together.

Whisk honey, oil, cider vinegar, & 1 1/4 c. warm water together. Using paddle attachment of the mixer, slowly incorporate the liquids into dry ingredients. Beat on med-high for 3 minutes.

To shape bagels: use a large soup spoon to scoop out batter. Drop a spoonful onto plate with brown rice flour. Roll it around a bit so it is easier to handle. Lightly pat until about 1/2" or a little less thick and make a hole with your finger. Make the hole big enough so it won't close up when they rise. Place on cookie sheet that has been dusted with cornmeal.

Loosely cover w/an oilded saran wrap and let rise in a warm place. The recipe did not say how long to let them rise. I let them rise 45 minutes.

When they are risen, bring a large skillet of water with 1 tsp sugar to a boil, and drop a few into it. Turn over after 30 secondes and let cook 30 seconds as well on the other side.

Remove with a slotted spoon and put them back on the same cookie sheet. One they are all boiled, bake them at 375F for 25 minutes. Cool on a rack.

*optional: Once you have boiled them, brush them with a wash of 1 egg white + 2 T. of cold water, beaten together. Sprinkle each bagels with poppy, sesame or caraway seeds, toasted onion, raw garlic bits, coarse salt, your choice.
