I modified this from the recipe in the Jan/Feb 2005 issue of Cooking Light. It is not greasy and salty like so many other FO soup recipes.
2 teaspoons olive oil
4 cups thinly slices sweet onions, like Walla Walla
4 cups thinly slices red onion
1/2 teaspoon white sugar
1/2 teaspoon ground black pepper
1/4 teaspoon salt
8 cups less-sodium GF beef broth (I use the Imagine one that comes in the box)
1/4 teaspoon chopped thyme
Optional:
sliced GF bread
GF cheese fo garnish (your choice. I like Provolone, swiss or Parmesan)
Heat olive oil over med heat in a larg soup pot. Add onions and saute for 5 minutes. Stir in sugar, pepper and salt. Increase the heat to Medion-high, and saute another 5 minutes or until onion is golden brown. Add broth and thyme. Cover, reduce the heat and simmer 2 hours.
I like it plain, or you can float some bread on the top of each serving and top with cheese and broil until bubbly. Makes 8 servings. Enjoy! _________________ -Colleen
